As if creamy, cool key lime pie wasn't delicious enough in itself - especially during these last hot days of summer - there's just something about individual servings in jars that send it over the top. With each bite, the whipped cream mellows the tart, zesty lime filling, and then you reach that buttery graham cracker layer. So good.

Crust layer
1 cup graham cracker crumbs (18 crackers, or 2/3 of a sleeve)
2 tablespoons + 2 teaspoons granulated sugar
Pinch salt
3 tablespoons unsalted butter (melted)
Pie filling
1 - 14- ounce can sweetened condensed milk
2 teaspoons lime zest
1/2 cup fresh lime juice
3 egg yolks
Topping
Whipped cream
Lime wedges for garnish
Also needed
Four half-pint (8-ounce mason jars)
Four canning lids and rings
Baking sheet

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Set jars onto a jelly roll pan or baking sheet.
  • Place graham crackers in a Ziploc bag and smash to crumbs with a rolling pin. Add to a medium bowl along with the sugar and pinch of salt. Stir with a fork until incorporated. Drizzle melted butter into the crumb and sugar mixture; stir with a fork until blended.
  • Spoon graham cracker crumb mixture into each of the four jars, dividing evenly among the jars. Press very slightly into the bottom and up the sides, but don't compact the crumbs like you would a normal graham cracker crumb crust, or the crust will compact too much in the bottom of the jar and won't come up easily with a spoon.
  • Zest one of the limes. Add sweetened condensed milk, lime juice, egg yolks, and lime zest to a medium bowl. Stir with a whisk until all ingredients are well-combined. Dividing the mixture evenly, filling into the jars.
  • Bake for about 15 minutes, or until the filling no longer jiggles.
  • Let cool at room temperature for about 30 minutes, then cover with lids and bands and refrigerate for at least two hours, until chilled.
  • To serve, top with whipped cream, a lime slice, and tall parfait spoons.
  • Keeps for up to three days in the refrigerator (add whipped cream and garnish right before serving).

Ok, not really key lime unless you use actual key lime juice but that's hard to find everywhere but southern Florida. But this goes in the same vein as my other recipes on making your own yogurt cups-- don't pay for artificial colors and flavors when you can control the content! I recommend using Greek yogurt or heavily strained plain yogurt for this not just for the creamy consistency, but because the main flavanoid here is purely liquid instead of a semi-solid like pumpkin, so normal plain yogurt would get too watery.

1 cup plain yogurt (preferably low-fat)
2 tablespoons key lime juice
1/8 teaspoon vanilla extract
1/2 tablespoon sugar

I got this recipe from the August 2008 issue of Good Housekeeping Magazine. It's an easy, nice light version of key lime pie and I made it for my husband who loves this dessert. He truly enjoyed this version. I used a store bought reduced fat graham cracker crust just for convenience. Also, I used regular fat sweetened condensed milk because that is what I had on hand.

1 1/4 cups low fat graham cracker crumbs
4 tablespoons trans fat-free extra-light vegetable oil spread (60-70% oil)
1 tablespoon sugar
1/8 teaspoon salt
1/3 cup cold water
1 (1/4 ounce) envelope unflavored gelatin
20 -22 key limes or 4 -5 regular limes
1 (14 ounce) can fat-free sweetened condensed milk
1 1/2 cups plain fat-free yogurt

Steps:

  • Preheat oven to 375°F.
  • In a 9-inch glass pie plate, mix crumbs with spread, sugar, and salt to moisten. With hand, press onto bottom and up sides of pie plate. Bake 10 to 12 minutes, until golden. Cool until ready to fill.
  • Meanwhile, to 1-quart saucepan, add water; sprinkle with gelatin. Let stand 2 minutes to soften. Cook on low to dissolve, stirring. Remove from heat.
  • From limes, grate 2 teaspoons peel and squeeze 1/2 cup juice; if using key limes, do not use grated peel - it will make filling taste bitter. In bowl, whisk lime peel and juice, milk, and yogurt. Whisk in gelatin mixture.
  • Spoon filling into crust. Cover; refrigerate at least 2 hours to set.
