1 tablespoon white wine vinegar
1 teaspoon lime zest plus 3 tablespoons lime juice
1/2 teaspoon chipotle chile powder
Kosher salt
2 cups cubed watermelon
1/2 cup very thinly sliced red onion
1 large mango, peeled, pitted and chopped
1/2 English cucumber, cut into half-moons
1/2 cup fresh mint leaves

Steps:

  • For the spicy chipotle-lime vinaigrette: Whisk together the honey, olive oil, vinegar, lime zest and juice and chipotle chile powder in a small bowl. Season with salt to taste.

1 (10 lb) seedless watermelon
3 cups plain vodka or 3 cups citrus-infused vodka

Steps:

  • Cut a hole in the top of the watermelon, wide and deep enough to insert a funnel.
  • Pour as much vodka through the funnel as can be absorbed (1/2 cup to 1 cup), remove the funnel and replace the watermelon plug, Let sit for 4 hours and again, pour is as much vodka as can be absorbed, Repeat the process until all the vodka has been absorbed, (eventually all the vodka WILL be absorbed).

1 (6 ounce) package strawberry-flavored gelatin mix
1 cup boiling water
1 cup cold water
3 cups seeded, chopped watermelon
1 (8 ounce) can crushed pineapple, in juice
1 ¼ cups chopped pecans, divided
1 (8 ounce) package cream cheese, softened
¼ cup milk
¼ cup white sugar
½ (8 ounce) container whipped topping
