HEALTHIER FRESH STRAWBERRY MUFFINS

Healthier Fresh Strawberry Muffins image

This is my two-year-old's favorite fresh strawberry muffin recipe! While it's a sweet muffin, the ingredients are healthy enough that I feel good about giving her one for breakfast. They only last a couple of days fresh, but freeze beautifully - I usually put half in the freezer right away and enjoy them for months!

Tips:

  • Prep all Ingredients: Before starting, ensure all ingredients are measured and prepped. Room temperature ingredients often blend better.
  • Fresh and Ripe Fruits: Use ripe strawberries and peaches for the best flavor. Fresh fruits provide natural sweetness and juiciness.
  • Fold Fruits Gently: When adding fruit to the batter, fold it gently to avoid breaking down the fruit pieces. Overmixing can result in a dense texture.
  • Muffin Pan Preparation: Grease or line the muffin cups with paper liners to prevent sticking and ensure easy removal.
  • Batter Consistency: The batter should be thick enough to coat the back of a spoon. If it's too thin, add more flour; if it's too thick, add more milk.
  • Muffin Top Perfection: For a golden brown muffin top, sprinkle coarse sugar or turbinado sugar on top before baking.
  • Baking Time: Muffins are done when a toothpick inserted into the center comes out clean or with just a few moist crumbs attached.
  • Cooling: Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Conclusion:

These healthy strawberry peach muffins offer a delectable blend of flavors, combining the natural sweetness of fresh strawberries and peaches with a moist and fluffy muffin texture. The muffins are not only delicious but also packed with nutrients from the fruits, making them a guilt-free indulgence. Perfect for breakfast, snacks, or as a sweet treat, these muffins are sure to be a hit with people of all ages. Enjoy the goodness of fresh fruits and wholesome ingredients in every bite!
