1 1/4 lbs extra lean ground turkey (99% fat free)
1 cup chopped onion
2 garlic cloves, chopped
1 tablespoon olive oil
1/4 cup white wine
1 egg, beaten
2 green onions, sliced
1 tablespoon spicy brown mustard
1 teaspoon low sodium soy sauce
2 teaspoons salt
2 teaspoons pepper
1 teaspoon ground sage
1/2 cup Italian breadcrumbs
3/4 cup ketchup
2 teaspoons brown sugar
1/2 teaspoon ground ginger

Steps:

  • Set oven to 350 degrees Fahrenheit. Line an ovenproof casserole or baking dish with foil.
  • Heat olive oil in medium-sized skillet. Add onion and cook over medium heat until soft and translucent. Add garlic and cook for 1-2 minutes
  • Add white wine to pan and cook for 1 minute Remove from heat.
  • In a large bowl, place turkey, onion mixture and remaining meatloaf ingredients. Using clean hands, mix until ingredients are well combined.
  • Place meat mixture in casserole/baking dish and form into loaf form.
  • In a small bowl, combine all glaze ingredients. Spread evenly over meatloaf.
  • Place dish in heated oven and bake for 45 minutes. Let meatloaf rest for 5-10 mins before serving.

1/4 cup quinoa
1/2 cup water
1 teaspoon olive oil
1 small onion, chopped
1 large clove garlic, chopped
1 (20 ounce) package ground turkey
1 tablespoon tomato paste
1 tablespoon hot pepper sauce
2 tablespoons worcestershire sauce
1 egg
1 1/2 teaspoons salt
1 teaspoon ground black pepper
2 tablespoons brown sugar
2 teaspoons worcestershire sauce
1 teaspoon water

Steps:

  • 1. Bring the quinoa and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the quinoa is tender, and the water has been absorbed, about 15 to 20 minutes. Set aside to cool.
  • 2. Preheat an oven to 350 degrees F (175 degrees C).
  • 3. Heat the olive oil in a skillet over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Add the garlic and cook for another minute; remove from heat to cool.
  • 4. Stir the turkey, cooked quinoa, onions, tomato paste, hot sauce, 2 tablespoons Worcestershire, egg, salt, and pepper in a large bowl until well combined. The mixture will be very moist. Shape into a loaf on a foil lined baking sheet. Combine the brown sugar, 2 teaspoons Worcestershire, and 1 teaspoon water in a small bowl. Rub the paste over the top of the meatloaf.
  • 5. Bake in the preheated oven until no longer pink in the center, about 50 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let the meatloaf cool for 10 minutes before slicing and serving.

2 slice fat-free cheddar cheese
1/2 c shredded fat-free cheddar cheese
1/2 c canned sweet corn kernels
1/4 c chopped green bell peppers
1/4 c chopped onions
1/2 c salsa
1/2 pkg taco seasoning mix, (dry)

Steps:

  • 1. Preheat oven to 375 Cook peppers and onions for 3 minutes over medium heat in a pan sprayed with nonstick spray. In a large bowl, combine onions and peppers with turkey, corn and seasoning mix. Spread half of the mixture evenly into the bottom of a loaf pan (about 9" x 5" sprayed with nonstick spray. Layer the two slices of fat-free cheese on top of the mixture ( try to keep slices away from the pan's edges). Evenly top with the remaining meat mixture. Poor the salsa over the top of the loaf. 1 lb organic ground turkey breast
6 oz fresh baby spinach - chopped
8 oz mushrooms, chopped
2 celery stalks - finely chopped
1-2 shallots - finely chopped
3 clove garlic - finely chopped
1 egg
1/4 c 1% milk
1 c italian cheese blend - shredded
3 Tbsp olive oil, extra virgin
2 Tbsp earth balance buttery spread
2 Tbsp salt free perfect pinch all purpose seasoning
2 Tbsp salt free perfect pinch garlic & pepper seasoning
1 tsp pepper
1 tsp garlic powder
3 slices whole grain/whole wheat bread - cubed small

Steps:

  • 1. Heat extra virgin olive oil in a saute pan over medium heat, add mushrooms and celery, saute for 3 minutes, add shallots and saute for an additional 2 minutes. Add chopped garlic, saute for an additional 1 minute, add spinach, season with salt free seasonings (be generous), and pepper, saute until spinach is wilted. Remove from heat and let cool completely.
  • 2. Melt butter in a saute pan, add bread cubes and saute until toasted a little, season with salt free seasonings (be generous), garlic powder, and pepper. Remove from heat and let cool completely.
  • 3. Blend milk and egg together and set aside.
  • 4. In a mixing bowl add bread, milk and egg and mix well, add spinach mixture and stir,add turkey and mix thoroughly with hands, add cheese, mix and form into a loaf pan.
  • 5. Bake at 375 degrees for 1 hour.
