HEALTHY/SPICY BARBECUE BAKED BEANS AND SPINACH
I originally got this recipe from Eating Well magazine. It was a baked beans and sausage dish. We were making bbq chicken on the grill, so I figured why not try it without the sausage. My bf said it was way better than the original recipe, so I thought I should post it. Feel free to experiment with the beans. I have made it with white kidneys beans and it is still yummy. If you are watching your weight this is a great, easy to prepare side dish for the summer months! Note: Make sure to rinse the beans it will cut down the sodium in this dish, so don't be afraid of the nutrition facts. I don't think recipezaar takes into account rinsing the beans when it figures the nutrition information.

BBQ BAKED BEANS
BBQ baked beans are a summer staple. This shortcut version relies on ordinary canned baked beans, which we dress up with fresh peppers, onions, cider vinegar and barbecue sauce. The sweet and tangy side dish is perfect for a summer barbecue, picnic, potluck or weeknight dinner. The beans taste even better the next day, so they can be prepared ahead of time and reheated or served at room temperature.

BARBECUE BAKED BEANS
I've adapted this recipe from "The Barbecue Bible" by Steven Raichlin. If you like your barbecue beans on the sweet side, then these are the beans for you. I know that the list of ingredients is long, but most of them are probably already in your pantry. Don't be tempted to leave out the fresh garlic or fresh gingerroot--it makes a difference. This is mandatory with our ribs--all you need is a potato salad and coleslaw and you're all set.

SPICY BAKED BEANS
Tangy and sweet old-fashioned baked beans with a little jalapeno. They're easy to make and great at a BBQ, hamburger night, a picnic, etc. My husband's favorite semi-homemade recipe. Says the sweetness and fire create a super depth of flavor. It's not strong enough to overwhelm the sweet home-style of baked beans.

BEANS & SPINACH
"One of our favorite appetizers at a local restaurant is made with white beans and escarole. It's nearly impossible to find escarole where we live, so we subbed in baby spinach and were pleasantly surprised by the result. Enjoy!" Patrick and Helen Reddy - Wilmington, North Carolina

HEARTY BBQ BAKED BEANS
These beans have lots of flavor. I don't care for beans that are to sweet but you can add 2 tablespoons of brown sugar to sweeten these up. They go excellent with grilling. I use Bush's original beans and Jack Daniels BBQ sauce but you can use what you prefer. Reduce baking time to 1 hr if you don't like a thick beans.

Steps:
- Preheat grill to high.
- Place a large Dutch oven or cast-iron pot over direct heat and cook bacon until fat has begun to render. Add onion and red pepper and cook until they begin to soften, about 3-5 minutes. Add the beans, including canning liquid, and bring to a simmer.
- Add brown sugar, ketchup, apple cider vinegar, maple syrup, molasses, mustard, hot sauce, and Creole seasoning and stir to combine. Close the lid and cook the beans until the liquid has thickened, about 60 minutes. Cover the pot and move to the cooler side of the grill, then cook for another 20-30 minutes or until desired tenderness.
Tips:
- Use fresh spinach for the best flavor and texture. If you don't have fresh spinach on hand, you can use frozen spinach, but be sure to thaw it and squeeze out any excess water before using.
- Don't overcook the spinach. Spinach cooks very quickly, so be careful not to overcook it or it will become wilted and mushy. Just a few minutes in the pan or oven is all it takes.
- Use a variety of beans. You can use any type of beans you like in this recipe. Some good options include kidney beans, black beans, pinto beans, and navy beans. You can also use a mix of different types of beans.
- Add your favorite seasonings. This recipe is a great starting point, but you can feel free to add your favorite seasonings to taste. Some good options include chili powder, cumin, paprika, and garlic powder.
- Serve with a side of cornbread or rice. This dish is a great main course or side dish. Serve it with a side of cornbread or rice for a complete meal.
