CONTEST-WINNING ROASTED TOMATO SOUP

Contest-Winning Roasted Tomato Soup image

Just before the first frost of the season, we gather up all of the tomatoes from my mom's garden to create this flavor-packed soup. Although it sounds like a lot of garlic, when it's roasted, the garlic becomes mellow and almost sweet. We serve this soup with toasted bread spread with pesto.-Kaitlyn Lerdahl, Madison, Wisconsin

Categories     Basil

Number Of Ingredients 6

2 pounds Roma/plum tomatoes, quartered
3 tablespoons olive oil
4 cloves garlic
1 quart chicken stock
1/4 cup fresh basil, chopped
1/2 tablespoon balsamic vinegar, salt and ground black pepper to taste

Steps:

  • Place the tomato halves, cut side up, on a baking tray with the garlic cloves. Drizzle with the oil, and sprinkle with salt and pepper. Roast at 375 degrees F (195 degrees C) for 1 hour.
  • Snip the ends off the garlic cloves, and squeeze the insides into the bowl of a food processor along with the entire contents of the baking tray. Add stock, basil, and vinegar; blend until smooth. Season to taste.
  • Serve either hot or cold.

Tips:

  • Choose ripe, flavorful tomatoes for the best taste. You can use a variety of colors and sizes of tomatoes, such as Roma, cherry, or beefsteak.
  • Roasting the tomatoes before making the soup intensifies their flavor and gives the soup a smoky, rich taste.
  • Use a high-quality olive oil to roast the tomatoes. This will help to bring out their flavor.
  • If you don't have time to roast the tomatoes, you can use canned or diced tomatoes instead. However, roasting the tomatoes will give the soup a much better flavor.
  • Feel free to add other vegetables to the soup, such as onions, celery, carrots, or zucchini.
  • Season the soup to taste with salt, pepper, and other herbs and spices. You can also add a touch of acidity, such as lemon juice or vinegar, to balance the flavors.
  • Serve the soup hot or cold. Garnish with a dollop of sour cream, a sprinkle of chopped fresh herbs, or a drizzle of olive oil.

Conclusion:

Roasted tomato soup is a delicious, versatile dish that can be enjoyed hot or cold. It's a great way to use up leftover tomatoes, and it's also a healthy and flavorful meal. With a few simple ingredients and a little bit of time, you can easily make a delicious roasted tomato soup that the whole family will love.
