Although I just recently moved to the country, I love from-scratch cooking, and baking bread is a favorite pastime. This rich bread has a delectable cinnamon flavor and is loaded with raisins.

2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
1-1/2 cups warm milk (110° to 115°)
1/2 cup butter, melted
1/4 cup honey
2 teaspoons salt
1-1/2 teaspoons ground cinnamon
2 eggs
3 cups whole wheat flour
3-1/2 to 4 cups all-purpose flour
2 cups raisins
1 egg white
2 tablespoons cold water

Steps:

  • In a bowl, dissolve yeast in warm water. Add the milk, butter, honey, salt, cinnamon, eggs and whole wheat flour. Beat until smooth. Stir in enough all-purpose flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 8-10 minutes. , Place in a greased bowl, turning once to grease top. 1 cup rolled oats
¾ cup molasses
2 tablespoons butter
1 teaspoon salt
1 ½ cups boiling water
1 tablespoon white sugar, divided
¼ cup warm water (about 100 degrees F/38 degrees C)
2 ½ teaspoons active dry yeast
4 ½ cups bread flour
1 ½ cups raisins

Steps:

  • Place oats, molasses, butter, and salt into the bread maker bowl; add the boiling water.
  • Measure 1/4 teaspoon sugar into a small cup and set aside. Pour remaining sugar into the oat mixture and stir. Let mixture cool to about 100 degrees F/38 degrees C, about 20 minutes.

2 cups oats
1/3 cup molasses
1/4 cup brown sugar
1/4 cup shortening
4 teaspoons salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
2 teaspoons sugar
1 cup warm water
4 teaspoons active dry yeast
3 cups whole wheat flour
3 -3 1/2 cups all-purpose flour
1 1/2 cups raisins

Steps:

  • Heat water nearly to boiling.
  • Combine oats, molasses, brown sugar, shortening, salt, cinnamon, and nutmeg and pour hot water over mixture; cool this mixture to lukewarm.
  • Dissolve sugar and yeast in warm water and let stand for 10 minutes; add to oat mixture.
  • Beat in 2 cups whole wheat flour and beat; then stir in remaining 1 cup and enough all-purpose flour for dough to leave sides of bowl.
