1 tbsp olive oil
2 carrots, chopped
1 large onion, finely chopped
1l vegetable stock
400g can chopped tomato
200g frozen mixed peas and beans
250g pack fresh filled tortellini (we used spinach and ricotta)
handful of basil leaves (optional)
grated parmesan (or vegetarian alternative), to serve

Steps:

  • Heat oil in a pan. Fry the carrots and onion for 5 mins until starting to soften. Add the stock and tomatoes, then simmer for 10 mins. Add the peas and beans with 5 mins to go.
  • Once veg is tender, stir in the pasta. Return to the boil and simmer for 2 mins until the pasta is just cooked. Stir in the basil, if using. Season, then serve in bowls topped with a sprinkling of Parmesan and slices of garlic bread.

1 (14 ounce) package dry split peas
1 (14 ounce) package alphabet pasta
1 1/2 cups brown rice
1 (12 ounce) package pearl barley
1 (12 ounce) package lentils
4 cups instant minced onion

Steps:

  • Combine all ingredients in a large airtight container.
  • Stir to evenly distribute ingredients.
  • Label as Hearty Soup Mix.
  • Store in a cool, dry place and use within 6 months.
  • Shake well before using.
  • Makes about 12 1/2 cups of mix.
  • Hearty Soup Stock: Put 6 cups of water and 1 1/3 cups of mix in a large kettle or Dutch oven.

1/4 teaspoon garlic powder
1/8 teaspoon ground ginger
1 bay leaf
2/3 cup raw brown rice or 2/3 cup long-grain rice (***NO INSTANT***)

Steps:

  • Note: Be sure to sort through all beans and discard unusable ones.
  • DO NOT USE INSTANT RICE.
