Categories     Side Dish

Time 45m

Number Of Ingredients 10

2 cups long grain rice (uncooked)
Early Harvest Greek extra virgin olive oil
1 medium yellow onion, chopped (just over 1 cup chopped onions)
1 garlic clove, minced
1/2 cup orzo pasta
2 lemons, juice of (PLUS zest of 1 lemon)
2 cups low sodium broth (chicken or vegetable broth will work)
Pinch salt
Large handful chopped fresh parsley
1 tsp dill weed (dry dill)

Steps:

  • Wash rice well and then soak it for about 15 to 20 minutes in plenty of cold water (enough to cover the rice by 1 inch). You should be able to easily break a grain of rice by simply placing it between your thumb and index finger. Drain well.
  • Heat about 3 tbsp extra virgin olive oil in a large sauce pan with a lid (like this one) until oil is shimmering but not smoking. Add onions and cook for about 3 to 4 minutes until translucent. Add garlic and orzo pasta. Toss around for a bit until the orzo has gained some color then stir in the rice. Toss to coat.
  • Now add lemon juice and broth. Bring liquid to a rolling boil (it should reduce a little), then turn heat to low. Cover and let cook for about 20 minutes or until rice is done (liquid should be fully absorbed and rice should be tender but not sticky.)
  • Remove rice from heat. For best results, leave it covered and do not disturb rice for about 10 minutes or so.
  • Uncover and stir in parsley, dill weed and lemon zest. If you like, add a few slices of lemon on top for garnish. Enjoy!

HEDGIEHOG'S GREEK FLAVOURED RICE

Hedgiehog's Greek Flavoured Rice image

I came up with this recipe in an attempt to replicate the rice I ate at a local Mediterranean restaurant. The server told me the secret to the dish was the chicken broth and chickpeas. It is very flavourful and a great accompaniment to skewered Greek chicken and a fresh salad.

Time 35m

Yield 6 servings

Number Of Ingredients 5

6 crispy rice treats
1 cup semisweet chocolate chips, melted
1 1/4 cups chocolate sprinkles
12 mini semisweet chocolate chips
6 red or orange confetti sprinkles

Steps:

  • Unwrap ready-made crispy treats and form them into teardrop shapes using your hands. (Moisten your hands with water to prevent the treats from sticking.) Place the treats on a parchment-lined baking sheet.
  • Hold a crispy rice treat by the pointed end and dip it into the melted chocolate, covering about 2/3 of the treat, leaving a small area for the hedgehog's face. Hold it above the bowl to allow most of the excess chocolate to run back into the bowl. Immediately dip the chocolate-dipped portion into the chocolate sprinkles, covering the melted chocolate with the sprinkles so it resembles the hedgehog's spines. Place the dipped treats onto the parchment-lined baking sheet.
  • Let stand at room temperature until set, or chill in the refrigerator to speed setting. Press two mini semisweet chips into the marshmallow treat for the eyes. The exposed marshmallow treat portion will be sticky, so they should adhere naturally. Press a single confetti sprinkle onto the pointed end of the treat for a nose.

Tips for the Perfect Greek-Flavored Rice

  • Use high-quality ingredients. The better the quality of your ingredients, the better your rice will taste. Look for fresh, flavorful vegetables, and use a good quality olive oil.
  • Don't overcook the rice. Rice should be cooked until it is tender but still has a little bit of a bite to it. Overcooked rice will be mushy and bland.
  • Let the rice rest before serving. This will allow the rice to absorb all of the flavors of the other ingredients.
  • Use fresh herbs. Fresh herbs, such as parsley, mint, and oregano, will add a lot of flavor to your rice. If you don't have fresh herbs, you can use dried herbs, but be sure to use less, as they are more concentrated.
  • Don't be afraid to experiment. There are many different ways to make Greek-flavored rice. Feel free to experiment with different ingredients and flavors to find a recipe that you love.

Conclusion

Greek-flavored rice is a delicious and versatile dish that can be served as a main course or a side dish. It is easy to make and can be tailored to your own taste preferences. So next time you're looking for a quick and easy meal, give Greek-flavored rice a try. You won't be disappointed!
