6 medium potatoes, peeled and cubed
3/4 cup chopped fresh parsley
1/4 cup chopped fresh chives
1/2 cup cubed onions
4 cups of vegetable stock
Salt and pepper to taste
Cream, for garnishing (use cashew cream for a vegan option)

Steps:

  • Set a large pot of water to boil
  • As the water boils, peel and cube the potatoes, then add them to the boiling water, and let the potatoes cook for 30 minutes on high heat
  • When the potatoes are cooking, chop the onions, parsley and fresh chives before sauteeing them in a large pan, until onions are soft and translucent
  • Once potatoes are cooked and soft, drain the potatoes, then combine the potatoes with the sauteed herbs and onions, vegetable stock, and mix well
  • Process the mixture in batches in a blender, adding more water as needed until you get the desired texture of soup. I like mine slightly thick and creamy, but if you'd prefer a more liquid consistency, add more water or stock as you wish.

4 large baking potatoes (Idaho or russet)
1/4 cup olive oil
Kosher salt
1/4 cup sliced scallions
1/4 cup chopped mixed fresh herbs, such as chives, dill and parsley
1 1/2 cups sour cream (or plain Greek yogurt)
Freshly ground pepper
1/2 stick (1/4 cup) unsalted butter, at room temperature

Steps:

  • Start a wood campfire and wait until the flames die down and the coals glow red with white ash. Lower a grilling grate so that it sits above the coals and you have nice, even medium heat. Wash the potatoes well in cold water, prick each all over with the tip of a knife and rub them all over with olive oil. Rub salt all over the potatoes; this will help crisp the skin. Tightly wrap each potato in aluminum foil.
  • Place the potatoes on the grill grate over red coals (medium heat) and cook about 1 hour to 1 hour 15 minutes, turning halfway through. (Feed the fire with more wood as needed.) When done, the tip of a paring knife will go straight through the potato without resistance (you can do this through the foil).
  • In a small bowl, combine the scallions, chopped herbs and sour cream. Set aside.
  • Cut the potatoes open through the foil and peel back the foil to expose the potato. Squeeze the potatoes gently from the bottom to expose the soft, fluffy insides. Season with salt and pepper, top with butter and finish with a big spoonful of the herbed sour cream.

½ cup chopped celery

2 cloves garlic, minced

5 tablespoons margarine
4 tablespoons all-purpose flour
1 ½ cups chicken broth
1 ½ cups whole milk
3 potatoes, cut into 1/4-inch slices
2 teaspoons Worcestershire sauce
1 ½ teaspoons mustard powder
1 pinch ground allspice
¾ teaspoon celery seed
½ teaspoon dried thyme
½ teaspoon seasoning salt
2 tablespoons dry white wine
¼ teaspoon ground cayenne pepper
¼ teaspoon chicken bouillon powder

1 boiling potato, peeled and quartered
1 medium onion, quartered
1 celery, chopped
1 small turnip, peeled and halved
1 medium leek, white part only, chopped
6 fresh parsley sprigs
2 tablespoons fresh lemon juice
1/2 teaspoon herbes de provence, crumbled
1/2 teaspoon dried oregano, crumbled
1/4 teaspoon celery salt
1/8 teaspoon dried marjoram, crumbled
1/8 teaspoon ground coriander
2 cups half-and-half
5 tablespoons butter
5 tablespoons all-purpose flour
7 cups artichoke stock
5 tablespoons madeira wine
1/8 teaspoon nutmeg, freshly grated
1 dash hot pepper sauce
salt
