Number Of Ingredients 10

2 packages (10 ounces each) frozen chopped spinach
2 cups cooked rice
2 cups shredded cheddar cheese
4 large eggs, beaten
2/3 cup whole milk
1/4 cup butter, softened
1/4 cup chopped onion
2 teaspoons salt
1 teaspoon Worcestershire sauce
1 teaspoon ground thyme

Steps:

  • Cook spinach according to package directions; drain well, squeezing out excess liquid. Combine spinach with remaining ingredients in a large bowl. , Pour into a greased 13-in. x 9-in. baking dish. Cover and bake at 350° for 20 minutes. Uncover and bake 5 minutes more or until set. Cut into squares to serve.

1 pkg frozen chopped spinach
1 c cooked rice
1 c grated cheddar cheese
2 eggs, beaten
2 Tblsp melted butter
1/4 c milk, heated
1/2 tsp Worchester sauce
1 tsp salt
1/2 tsp crushed thyme or rosemary
2 Tblsp chopped onion

Steps:

  • Cook & drain spinach, squeezing out all juice. Mix spinach w/ cold rice. Blend lightly beaten eggs w/ hot milk, butter, all seasonings and half of the cheese; pour over spinach mixture. Stir well; then spoon spinach mixture into shallow rectangular dish. Sprinkle w/ remaining cheese. Bake at 350* for 20 - 25 minutes, or until a knife a inserted in the middle comes out clean. Cut into squares.
