Provided by Food Network Kitchen

Categories     appetizer

Time 1h

Yield 4 to 6 appetizer servings

Number Of Ingredients 15

4 tablespoons unsalted butter
1 tablespoon minced bacon (about 1/2 ounce)
1 Spanish onion, chopped
1 carrot, chopped
1 stalk celery, chopped
4 cloves garlic, minced
5 tablespoons all-purpose flour
5 cups chicken broth, homemade or low-sodium canned
1 (28-ounce) can whole, peeled tomatoes (with liquid), roughly chopped
3 parsley sprigs
3 fresh thyme sprigs
1 bay leaf
1 cup heavy cream
1 3/4 teaspoon kosher salt
Freshly ground black pepper

Steps:

  • Heat the butter in a large soup pot over medium-high heat. Add the bacon and cook, stirring, until crisp and most of the fat has rendered, about 1 minute. Using a slotted spoon, transfer the bacon to a paper towel-lined plate and set aside. Lower the heat to medium, add the onion, carrots, celery, and garlic and cook, covered, stirring occasionally, until soft and fragrant, about 8 minutes.
  • Stir in the flour and cook, stirring, for 3 minutes. Pour in the broth and tomatoes and bring to a boil while whisking constantly. Tie the parsley sprigs, thyme, and bay leaf together with a piece of kitchen twine and add to the pot. Lower the heat and simmer for 30 minutes. Remove from the heat and allow to cool.
  • When the soup base is cool, remove and discard the herb bundle. Working in batches, transfer the mixture to a blender and puree until smooth. Using a sieve over a large bowl, strain the tomato puree. Return the puree to the pot and reheat over medium heat.
  • Whisk the heavy cream and salt into the soup and season with pepper to taste. Divide among warm soup bowls, garnish with the crispy bacon, and serve immediately.

Provided by Martha Stewart

Categories     Food & Cooking     Soups, Stews & Stocks     Soup Recipes

Number Of Ingredients 13

3 pounds fresh plum tomatoes
1 tablespoon unsalted butter
1 tablespoon olive oil
2 cloves garlic, crushed
1 large onion, finely chopped
2 carrots, peeled and chopped into 1/2-inch pieces
1 stalk celery, chopped
1 1/2 tablespoons (about 2 sprigs) chopped fresh rosemary, plus additional sprigs for garnish
Salt and freshly ground pepper
1 thick slice day-old Italian or French bread, torn into pieces
3 cups chicken stock, preferably homemade, plus more as needed
Creme fraiche or sour cream, as garnish
Pinch of sugar

Steps:

  • Using a grilling fork, roast tomatoes over medium-hot coals or on a gas grill until skins blacken and split; then peel, core, seed, and chop.
  • In a small stockpot over low heat, melt butter with oil. Add garlic and cook until golden. Add onion and cook until slightly softened, about 5 to 10 minutes. Add carrots, celery, and 1 tablespoon chopped rosemary, and season lightly with salt and pepper. Cover pot and cook until vegetables are soft, about 15 minutes. Do not allow to brown.
  • Increase heat to medium and add tomatoes. Cook for 10 minutes, stirring occasionally, until mixture resembles a thick sauce. Add bread pieces and stock and bring to a simmer. Add sugar and remaining chopped rosemary. Simmer, uncovered, for 20 minutes.
  • Let soup cool for a few minutes, then puree in a blender until smooth. Thin with more stock if necessary. Adjust seasonings and serve hot, garnished with rosemary sprigs and creme fraiche or sour cream.

Tips:

  • Use ripe, in-season tomatoes: This will ensure the best flavor for your bisque.
  • Roast the tomatoes before blending: Roasting intensifies the flavor of the tomatoes and gives the bisque a slightly smoky taste.
  • Use a variety of herbs: This will give your bisque a more complex flavor. Some good options include basil, thyme, oregano, and rosemary.
  • Add a little cream or milk: This will help to create a smooth and creamy bisque.
  • Season the bisque to taste: Add salt and pepper to taste, and adjust the other seasonings as needed.
  • Serve the bisque hot: This is the best way to enjoy its flavor and texture.

Conclusion:

Herbed tomato bisque is a delicious and easy-to-make soup that is perfect for a cold day. It is also a great way to use up ripe tomatoes. With its vibrant color and rich flavor, this bisque is sure to be a hit with your family and friends.
