Time 40m

Yield 12 servings

Number Of Ingredients 3

1 (18 1/4-ounce) box devil's food cake mix
1 (15-ounce) can 100-percent pure pumpkin
Fresh berries, for serving, optional

Steps:

  • Preheat the oven to 400 degrees F.
  • Pour cake mix into a large bowl and whisk to remove any lumps. Add pumpkin and stir until completely smooth and uniform.
  • Cook's Note: Do not add any other ingredients that may be mentioned on the cake mix box, like eggs, oil, or water. The mixture will be very thick, so you might be tempted to add in other things to make the batter smoother. Do not do this!
  • Place batter into a 12-cup muffin pan lined with foil baking cups and/or sprayed with nonstick spray. Place pan in the oven and bake until a toothpick inserted into the center of a muffin comes out clean, about 20 minutes.
  • Allow to cool slightly and then serve. Garnish with fresh berries, if using. Enjoy!

Time 33m

Yield 18 muffins, 18 serving(s)

Number Of Ingredients 4

3 cups All Bran extra fiber cereal, Kellogg's
2 1/2-3 cups hot water, as per your taste of the moisture
1 (18 1/4 ounce) box fudge brownie mix
1 1/2 teaspoons baking powder

Steps:

  • Preheat the oven to 350 degrees.
  • Prepare muffin tin with Pam for Baking spray.
  • Soak the cereal with water until all absorbed.
  • Mix the baking powder with the dry brownie mix.
  • Add the cereal mixture until well blended.
  • Divide batter into muffin cups.
  • Bake for approximately 23 minutes, until the muffin tops spring back.

Tips:

  • Measure ingredients accurately: Baking is a science, so it's important to measure your ingredients correctly. Use a kitchen scale to weigh your ingredients for the most accurate results.
  • Use high-quality chocolate: The quality of your chocolate will make a big difference in the taste of your muffins. Use a good-quality semisweet or bittersweet chocolate for the best results.
  • Don't overmix the batter: Overmixing the batter can result in tough muffins. Mix just until the ingredients are combined.
  • Bake the muffins until a toothpick inserted into the center comes out with just a few moist crumbs attached: Overbaking the muffins will make them dry. Check the muffins a few minutes before the recommended baking time is up.
  • Let the muffins cool completely before frosting them: This will help the frosting to set properly.

Conclusion:

These HGS Yum-Yum Brownie Muffins are a delicious and indulgent treat that are perfect for any occasion. They're easy to make and can be customized to your liking. Whether you're looking for a quick and easy snack or a special dessert, these muffins are sure to please.
