Hi li min, also called hi lim min, is a classic Chinese stir-fry dish that typically combines chicken or shrimp with rice vermicelli noodles, vegetables, and a savory sauce. The dish's name, which translates to "barbecued rice noodles," reflects its origins in Fujian province, China, where it is often enjoyed as a street food. With its tantalizing flavors and vibrant colors, hi li min has become a popular choice for home cooking and can easily be adapted to personal preferences, making it a versatile and delicious meal option for any occasion.

HI-LI-MIN

Hi-Li-Min image

A recipe from my childhood that Mum doesn't exactly know the source of. Every family seems to know about it, but has their own version. It tends taste better in the following days One of my favourite (although naughty) ways to serve is over fresh white bread roll with lots of butter, Hi-Li-Min on top. We usually season to personal taste with Soy Sauce. If you wish to freeze - cook just the mince and either leave the cabbage out entirely or place cut cabbage on top and it cooks well from there.

Time 45m

Yield 4-6 serving(s)

Number Of Ingredients 10

1 1/2 kg beef mince
1 cup celery, roughly chopped
3 slices bacon, diced
5 tablespoons white rice
3 medium onions, diced
1 cup green beans, chopped into 3cm lengths
2 cups cabbage, chopped or shredded
1 beef stock cube
1 (120 g) packet chicken noodle soup mix
2 teaspoons curry powder

Steps:

  • Fry onions, bacon and noodle soup mix until onions soft.
  • Add mince and brown.
  • Add all other ingredients except cabbage. At this point I usually add a little water, cover and cook until the rice is tender.
  • Add the cabbage now and cook until desired doneness. Some like the cabbage crunchy, others like it more tender.

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 17

Salt
8 ounces dried Chinese egg noodles, or 1 pound fresh
1 packet chicken bouillon mix, such as Knorr, dissolved in 1 3/4 cups hot water
1/4 cup plus 2 tablespoons oyster sauce
3 tablespoons low-sodium soy sauce
1 tablespoon sesame oil
1 tablespoon Sriracha chili sauce
2 tablespoons vegetable oil
1 tablespoon minced garlic
2 teaspoons minced ginger
1 cup thinly sliced white button mushrooms
2 stalks celery, thinly sliced
1 large carrot, shredded
1 small bunch scallions, white and green parts, sliced
1 pound small shrimp, peeled and deveined
1/4 head Napa cabbage, finely shredded
2 tablespoons cornstarch

Steps:

  • For the noodles: In a large pot of salted boiling water, cook the noodles according to their package directions. Drain and set aside.
  • For the sauce: Combine the bouillon, oyster sauce, soy sauce, sesame oil and Sriracha in a large glass measuring cup or small bowl and set aside. This may look like a lot of sauce, but you have a lot of noodles and veggies to coat!
  • For the lo mein: Heat a wok over high heat. When hot, add 1 tablespoon vegetable oil, half the garlic, half the ginger and half the scallions and saute 30 seconds. Add in the shrimp and cook until they just start to turn pink and curl up, about 2 minutes. Transfer the shrimp and aromatics to a plate and reserve.
  • In the same pan, heat the remaining 1 tablespoon vegetable oil and add the remaining garlic, ginger and scallions. Saute 30 seconds, and then add in the mushrooms, celery, carrots and cabbage. Saute the veggies until they begin to brown and caramelize, 4 to 5 minutes.
  • Whisk the cornstarch into 2 tablespoons cold water. Once dissolved, add to the sauce. Add the sauce to the pan with the vegetables and bring to a simmer. Toss in the reserved shrimp, aromatics and noodles and serve!

CLASSIC LO MEIN (NOODLES)

Classic Lo Mein (Noodles) image

I love this deceptively simple dish. If you have all the ingredients, you can have a plate of delicious noodles on the table within 15 to 20 minutes, with prep included. There really isn't such a thing as a "lo mein" noodle, so don't try to find it on the shelf. You want to buy an egg noodle or pasta that's relatively thin and has some tooth. Some common names will be lo mein, chow mein, egg noodles or pancit noodles. Most markets have Japanese yaki soba noodles in the cold case, and those would work perfectly. Spaghetti or fettuccini cooked al dente and rinsed in cold water and drained in a colander will also make a great lo mein. The traditional difference between lo mein and chow mein is that lo mein is a soft noodle with some gravy, and chow mein is a crispy fried noodle tossed with or smothered in sauce. This has become very convoluted over the 200 years Chinese food has existed in America, with regional evolutions. Another tip: Although sesame oil is a fat and you would assume it should be used to start the stir-fry, I want you to treat it like a sauce. Sesame oil has incredible aroma and flavor but burns at a low temp. Add it to a sauce instead and use a high-temp oil like canola or peanut for cooking.

Time 20m

Yield 4 to 6 servings

Number Of Ingredients 12

3 tablespoons (45 ml) oyster sauce
1 teaspoon sesame oil
1 tablespoon (15 ml) soy sauce
1/4 cup (60 ml) chicken stock
1 tablespoon cornstarch
3 tablespoons (45 ml) cooking oil, such as canola or peanut oil
2 teaspoons (10 grams) minced garlic
1 1/2 tablespoons (11 grams) thinly sliced ginger
1/2 pound (250 grams) boneless, skinless chicken breast or thigh, thinly sliced
3 cups (750 grams) fresh lo mein noodles (see Cook's Note)
1/4 pound (125 grams) baby bok choy, bottoms removed
3 scallions, cut into 1 1/2-inch (4-cm) pieces

Steps:

  • To make the sauce, stir together the oyster sauce, sesame oil, soy sauce, chicken stock and cornstarch in a small bowl and reserve.
  • Heat a wok or large, heavy-bottomed skillet over high heat and add the cooking oil. Once you see wisps of white smoke, add the garlic and ginger and cook, stirring, until light brown and fragrant, about 20 seconds. Add the chicken and cook, stirring, until medium, about 1 minute.
  • Stir in the noodles and bok choy and cook, stirring and tossing, until the bok choy starts to soften and turn bright green, about 1 minute.
  • Stir in the sauce; allow the sauce to coat all the ingredients and start to simmer, about 1 more minute.
  • Cook, stirring and tossing, until the chicken is cooked through, about 1 more minute, and the sauce starts to bubble into a glaze. Top with the scallions and serve hot.
