2 tablespoons olive oil
2 pounds ground turkey (not lean)
Kosher salt and freshly ground black pepper
4 cloves garlic, chopped
2 stalks celery, chopped
1 large onion, chopped
3 tablespoons chile powder
2 tablespoons tomato paste
One 28-ounce can diced tomatoes
One 15-ounce can pinto beans, rinsed and drained
One 15-ounce can kidney beans, rinsed and drained
One 15-ounce can black beans, rinsed and drained
One 4-ounce can diced green chiles (mild, medium or hot, as desired)
2 cups chicken broth
1 cup shredded pepper Jack or sharp Cheddar, for topping
1 cup sour cream, for topping
1 cup sliced scallions, for topping

Steps:

  • Heat the olive oil in a Dutch oven or large wide pot over medium-high heat. Add the turkey, 1 teaspoon salt and a few grinds of pepper and cook, breaking up any clumps with a wooden spoon, until brown, about 8 minutes. Remove the turkey and set aside. Add the garlic, celery, onion and 1/4 teaspoon salt to the pot and cook, stirring occasionally, until the vegetables have softened, about 8 minutes. Add the chile powder and tomato paste and cook, stirring, 1 minute.
  • Return the turkey to the pot and add the diced tomatoes, beans, green chiles and chicken broth. Increase the heat to medium-high and bring to a simmer, then reduce the heat and simmer until the vegetables are tender and the flavors have melded, about 30 minutes.
  • Serve the chili topped with the cheese, sour cream and scallions.

1/4 bunch cilantro, chopped
1/4 cup extra-virgin olive oil
1 large sweet onion, diced
4 cloves garlic, minced
2 teaspoons kosher salt
3 pounds ground turkey (50-50 light and dark meat)
1/4 cup all-purpose flour
1/4 cup chili powder
3 tablespoons ground cumin
1/2 teaspoon freshly ground black pepper
Pinch of cayenne pepper
4 cups low-sodium chicken stock
2 15-ounce cans cannellini beans, with liquid

Steps:

  • In a blender or food processor, puree the roasted chiles and cilantro until smooth. Set aside.
  • In a large Dutch oven over medium-high heat, combine the olive oil, onion, garlic and salt. Cook until the onion is translucent, 5 to 6 minutes. Add the turkey and cook until browned and cooked through, breaking it up with a wooden spoon, 7 to 8 minutes.
  • Add the flour, chili powder, cumin, black pepper and cayenne and cook until fragrant, about 2 minutes. Deglaze the pot by adding the chicken stock and scraping up the browned bits from the bottom of the pot. Add the reserved pureed chiles and cilantro. 1 lb dried kidney beans
1 teaspoon oregano
1 onion, chopped
2 garlic cloves
1 tablespoon chili powder
1 lb ground turkey
2 teaspoons garlic powder
2 tablespoons flour
3 tablespoons chili powder
1 teaspoon basil
1 teaspoon oregano
1 (15 ounce) can tomato sauce
1 (14 1/2 ounce) can diced tomatoes

Steps:

  • Cook beans, oregano, onion, garlic and 1 Tbs. chili powder in six cups water for 2 hours. Salt to taste after 1 hour.
  • Toward end of bean cooking time, brown meat and garlic powder. Drain. Return to pan. Sprinkle with flour. (If flour sticks to pan, use a little water from beans to scrape sides.) Brown till combined.
  • Set aside.
  • Add tomato sauce, diced tomatoes (don't drain), chili powder, basil, and oregano to crock pot and stir till blended.

I was never much of a fan of the traditional hamburger and kidney bean chilis. Then I found this recipe and this chili is now the only one I make. It was originally from Bon Appetit but I've modified it to our tastes. I would never have thought that cocoa powder or cinnamon would go into a Chili recipe but I think that's what makes this chili so good. This chili can be prepared ahead of time and reheated in the microwave. And like most chilis tastes better once the flavors have a chance to blend.

2 tablespoons vegetable oil
2 medium onions, chopped
1 teaspoon dried oregano
1 teaspoon ground cumin
1 lb ground turkey (I like dark meat)
1/4 cup chili powder
2 bay leaves
1 tablespoon unsweetened cocoa powder
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1 (28 ounce) can no-salt-added diced tomatoes
2 cups chicken stock
1 (8 ounce) can no-salt-added tomato sauce
2 (15 ounce) cans small white beans, rinsed & drained

Steps:

  • Heat oil in heavy large pot over medium heat.
  • Add onions and sauté until light brown and tender.
  • Add oregano and cumin- stir 1 minute.
