My grandparents were originally from West Virginia and hillbilly hotdogs are always eaten at family reunions and family events during the summer even though most of the family lives in northern Indiana now. I personally like a sweet chili and a peppery coleslaw.

I just recently spent some time with family from my Grandpa Campbell's side in Ansted, WVA. My cousin Debbie owns a store called Chimney Corner USA and while browing the store I was very excited to find some Chow Chow. What is Chow, Chow? It is a pickled relish made with cabbage & veggies and can be hot, sweet, spicy or mild....

hot dogs, grilled
hot dog buns
2 Tbsp beans, (pinto or whatever you have on hand)
2 Tbsp chow chow ---- (it is a pickled relish with several veggies in it)

Steps:

  • 1. Grill your hot dogs and toast your buns. Heat up your bean mixture or just plain beans (have it your hillbilly way) lol
  • 2. Cook up your pinto beans w/bacon, onion and seasonings. I'll get back here and post my recipe soon for the pinto beans.
  • 3. Put 2 Tbsp of the beans and 2 Tbsp of the Chow Chow...I would be generous with the Chow Chow cause it tastes so so good!!!! Hope you enjoy a little bit of Hillbilly cookin'!
