1 (12 ounce) package fresh or frozen cranberries, coarsely chopped
1 (20 ounce) can crushed pineapple, with juice
2 cups white sugar
½ pint heavy whipping cream
1 cup chopped walnuts
2 cups miniature marshmallows

Steps:

  • In a large bowl, stir together the cranberries, pineapple (with juice) and sugar. Let stand for about an hour, to let sugar dissolve, and then pour the mixture into a strainer over a bowl. Let drain, covered, in the refrigerator for at least two hours, or overnight. (Note: The drippings make a wonderful cranberry punch, when mixed with lemon-lime soda!)
  • Before serving, whip the cream until soft peaks form. (You can sweeten the whipped cream with a little sugar, if desired.) In a large bowl, mix together the cranberry mixture, walnuts and marshmallows. Fold in the whipped cream and store in refrigerator until serving.

2 cups boiling water, divided
1 can (14 ounces) whole-berry cranberry sauce

Steps:

  • In a small bowl, dissolve gelatin in 1 cup boiling water. In another bowl, combine cranberry sauce and remaining water; add gelatin mixture and lemon juice. Pour into a 13x9-in. dish coated with cooking spray; refrigerate until firm, about 1 hour., In a large bowl, beat cream until stiff peaks form. In another bowl, beat cream cheese until smooth. 1 cup crushed pineapple, drained with juice reserved
1 cup water, or as needed
1 (3 ounce) package lime flavored Jell-O® mix
1 (3 ounce) package lemon flavored Jell-O® mix
1 cup mayonnaise
1 cup canned evaporated milk
1 cup small curd cottage cheese
½ cup coarsely chopped pecans

Steps:

  • In a large measuring pitcher, mix reserved pineapple juice and enough water to yield 2 cups. Pour into a pot and bring to a boil. Add the lime and lemon gelatin mixes and stir until completely dissolved.

¾ cup white sugar
2 large eggs eggs, beaten

1 (11 ounce) can mandarin orange segments, drained
1 cup shredded coconut
4 cups frozen whipped topping, thawed

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the pasta and cook until al dente, 5 to 7 minutes. Drain, transfer to a large bowl, and cool.

1 cup sour cream (8oz container)

Steps:

  • Dissolve red jello in 1 cup boiling water and stir in half the can of pineapple and all of the can of whole berry cranberry sauce.

2 oranges
1 (12 ounce) bag fresh cranberries
2 apples, unpeeled and cored
2 ½ cups boiling water, or as needed
1 (.25 ounce) package unflavored gelatin (such as Knox ®)
½ cup cold water
1 (6 ounce) package raspberry-flavored gelatin mix (such as Jell-O®)
2 cups white sugar
2 cups halved seedless grapes
2 cups chopped pecans
1 ½ cups frozen whipped topping (such as Cool Whip®), thawed
1 (8 ounce) package cream cheese, softened
3 tablespoons creamy salad dressing (such as Miracle Whip®)

1 sprig fresh parsley

Steps:

  • Grease a ring mold with 1 tablespoon creamy salad dressing. Zest 1 orange and then peel both oranges.
  • Place oranges, orange zest, cranberries, and apples together in the bowl of a food processor; pulse until coarsely chopped. Strain fruit pieces, reserving juice in a quart-size measuring cup. Add enough boiling water to measure 3 cups liquid.

1 large bunch red leaf lettuce, washed, dried and torn into bite-size pieces
1/2 cup pomegranate seeds (from 1 pomegranate)
2 cups large dark seedless grapes, halved
1/2 cup chopped red onion
1/4 cup crumbled blue cheese
4 ripe red pears
1/2 cup aged balsamic vinegar
1/4 cup olive oil
4 tablespoons brown sugar
salt and pepper, to taste
2 tablespoons finely minced fresh orange zest

Steps:

  • Make candied pecans.
  • In a large bowl, toss together the pomegranate seeds, grapes, red onion, and the blue cheese.
  • Divide torn lettuce leaves among 8 salad plates, and top each salad with the fruit mixture.
  • Halve and core pears and cut into 1/2-inch slices-- put a pear half, skin side up, in the center of each salad.
  • Arrange candied pecans around the pears.
  • Just before serving, heat balsamic vinegar, olive oil, and brown sugar in a small saucepan over medium heat, cooking and stirring until brown sugar dissolves. Off the heat, and season to taste with salt and pepper.

1 cup pineapple chunk (if canned then drain)
1/2 cup celery, diced

1/3 cup raisins

1/3 cup dried apricot, chopped in to smaller pieces
1 cup yogurt (non fat, low fat or regular) or 1 cup mayonnaise (non fat, low fat or regular)
1/2 cup dry white wine (I use the pineapple juice from the canned pineapple)
1 tablespoon fresh mint leaves, chopped (1 tsp dried)
1 cup pecans, chopped

2 lemons, juiced, plus 1/2 lemon
1 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
1/4 cup and 2 tablespoons extra-virgin olive oil
5 medium heads Belgian endive, ends trimmed and cut into 1-inch circles
1 medium green apple, peeled, cored, and cut into 1-inch cubes
1/4 pound Gruyere cheese, rind removed and diced into 1-inch cubes
1/2 avocado, diced into 1-inch cubes
2 tablespoons dried cranberries, or the seeds of 1 small pomegranate
2/3 cup defrosted corn kernels or 1/2 ear corn, cooked and kernels removed

Steps:

  • In a small bowl whisk together the lemon juice, salt, pepper and olive oil. Set aside.
  • Put the endive and apples into a large decorative serving bowl. Squeeze the juice of half a lemon into the bowl and toss to coat the endive and apples so they don't turn brown. Add the cheese and avocado, and then add the cranberries and corn.

You could try other Jell-o flavors, but we are traditionalists and stick with lime. Some family members enjoy the addition of chopped pecans but I prefer without.

1 (3 ounce) box lime Jell-O gelatin
1 cup boiling water
2/3 cup cold water (or reserve pineapple juice and use in place of water)
1 cup whipping cream
4 ounces cream cheese, room temperature
1 (15 1/4 ounce) can crushed pineapple, drained (approximately 1 cup pineapple)
1 cup red seedless grapes, halved (or more to taste)
3/4 cup mini marshmallows (optional)

Steps:

  • In medium bowl, combine lime gelatin and boiling water. Stir in cold water or pineapple juice. Chill slightly in refrigerator but don't allow to completely set.
  • Remove from refrigerator. Whip jello until fluffy like egg whites.
