This is a family favorite! A simple DIY that everyone will love! This is a family recipe from my Grandma, Penny Faust. One of my favorite childhood memories was watching my mom can her sweet zucchini relish. Yum! We use it in anything from homemade dressings, potato salad, egg salad, tuna salad...etc.

10 small zucchini, ends trimmed
1 red bell pepper, stemmed and seeded
4 onions, peeled
3 tablespoons salt
4 cups white sugar
2 ¼ cups vinegar
1 teaspoon celery seed
1 teaspoon ground turmeric
¼ cup cornstarch
12 half pint canning jars with lids and rings

Steps:

  • Run zucchini, red bell pepper, and onions through a meat grinder. Transfer ground zucchini mixture to a large bowl; sprinkle with salt. Refrigerate zucchini mixture, overnight or at least 10 hours.
  • Pour zucchini mixture into a large pot; add sugar, vinegar, celery seed, and turmeric. Bring to a boil, stirring constantly, for 15 to 20 minutes. Stir cornstarch into mixture; continue boiling until thickened, about 5 more minutes.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack relish into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

7 c (about 15 small ones) cucumbers, washed, ends cut off and finely chopped
2 c white onions, finely chopped
1/2 c red peppers, finely chopped
1/4 c pickling or kosher salt
2 c white vinegar
3 c granulated sugar, or to taste
1/2 Tbsp celery seeds
1/2 Tbsp mustard seeds
1/2 tsp ground turmeric

Steps:

  • 1. In a large bowl, combine cucumbers, onions, red pepper and salt. Cover the vegetables with water and let sit for 2 hours.
  • 2. Drain the vegetables in a colander lined with cheesecloth. Rinse well and drain again.
  • 3. Meanwhile, in a large pot over medium-high heat, add sugar and vinegar. Bring to a boil, stirring constantly until sugar is dissolved. Add celery seeds, mustard seeds and turmeric; stir again. Add drained vegetables, stir, bring back to a boil then reduce heat to medium; simmer for 10 minutes, stirring occasionally. If there's foam on the surface, skim it off with a spoon and discard it.
  • 4. Ladle the relish into sterilized jars leaving ½ inch headspace. Wipe the rims, place the lids and screw on the bands. Process jars in boiling water bath for 10 minutes. Yields 7 250 ml jars

Title says hot dog relish, but we use it on anything and in alot of recipes for added flavor...it's like my 'secret' weapon! Use in potato or macaroni salad dressing, ham bbqs, sloppy joes, baked beans...yummmmm, gives just that extra layer of flavor but nobody seems to be able to figure what makes it that good! ************RELISH************
4 large onions
4 c ground cabbage
10 large green tomatoes
12 green bell peppers
6 sweet red bell peppers
1/2 c table salt
************SYRUP************
6 c granulated sugar
1 Tbsp celery seed
2 Tbsp mustard seeds
1-1/2 tsp turmeric, ground
4 c white vinegar
2 c water

Steps:

  • 1. Wash and cut vegetables in large chunks. Old method uses a hand grinder, but I do it now in my KA food processor. Grind all ingredients and place in a large stainless steel kettle. Add 1/2 cup table salt; cover and let stand overnight. Then, rinse well in strainer/colander. Return to kettle.
  • 2. Combine all syrup ingredients in glass or stainless steel bowl, then add to rinsed vegetables in kettle. Heat to almost boiling, then let simmer 3 minutes.
  • 3. Wash pint jars in hot, soapy water to sterilize. Boil lids & rings in hot water. Put relish into hot sterile jars, leave about 1" headspace and wipe rims well. Place lids and rings on, making sure they are tightly sealed. Set on rack or towels, let cool. As they seal, you will hear lids popping. Store in cool place.
  • 4. We always at least double this recipe, sometimes triple it if all vegetables are available. Can also put in quart jars, if desired.
