Number Of Ingredients 8

2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 large egg
1 cup milk
1/4 cup honey
1/4 cup butter or margarine, melted
1/2 cup blueberries

Steps:

  • Position rack in the center of the oven and preheat to 400 degrees F. Lightly grease or line with paper muffin cups 1 muffin pan. In a large bowl, blend together the flour, baking powder, and salt. In a medium bowl, beat the eggs, milk, honey, and butter until smooth. Combine the two mixtures, blending until the dry ingredients are just moistened. Stir in the blueberries. Spoon the batter into the prepared muffin cups, filling each one about 3/4 full. Bake for 15-20 minutes, or until a cake tester or wooden toothpick inserted into the center comes out clean. Cool in the pan on a wire rack for 5-7 minutes. Serve warm, or invert onto the rack and cool completely before storing in an airtight container.

Tips:

  • Use fresh blueberries: Fresh blueberries will give your muffins the best flavor and texture. If you don't have fresh blueberries, you can use frozen blueberries, but be sure to thaw them before using.
  • Don't overmix the batter: Overmixing the batter will make your muffins tough. Mix just until the ingredients are combined.
  • Fill the muffin cups almost to the top: This will help the muffins rise properly.
  • Bake the muffins until a toothpick inserted into the center comes out clean: This will ensure that the muffins are cooked through.
  • Let the muffins cool completely before serving: This will help them hold their shape and make them easier to eat.

Conclusion:

Honey blueberry muffins are a delicious and easy-to-make treat that are perfect for breakfast, brunch, or a snack. With their moist texture, sweet honey flavor, and bursts of juicy blueberries, these muffins are sure to be a hit with everyone who tries them. So next time you're looking for a tasty and satisfying muffin recipe, give these honey blueberry muffins a try. You won't be disappointed!
