ROASTED PORK TENDERLOIN WITH HONEY MUSTARD SAUCE
Delicate and lean, pork tenderloin is an excellent cut that can be roasted whole or sliced into medallions. This recipe will allow you to prepare the rest of the meal while the tenderloin is roasting in the oven. I like to serve this with sauteed apple slices, sweet potato cakes and haricotes vert with walnuts.

Tips:
- Use a good quality pork tenderloin for the best results. Look for one that is firm and has a pink color.
- To ensure the pork tenderloin cooks evenly, make sure it is the same thickness throughout. If it is not, you can butterfly it, which involves slicing it lengthwise and pounding it out to an even thickness.
- Do not overcook the pork tenderloin, as it will become dry and tough. The internal temperature should reach 145 degrees Fahrenheit for medium-rare, 150 degrees Fahrenheit for medium, and 160 degrees Fahrenheit for medium-well.
- Let the pork tenderloin rest for a few minutes before slicing it, as this will help the juices redistribute and make the meat more tender.
- Serve the pork tenderloin with your favorite sides, such as mashed potatoes, roasted vegetables, or a salad.
Conclusion:
Honey mustard pork tenderloin is a delicious and easy-to-make dish that is perfect for a weeknight meal or a special occasion.
