2 cups all-purpose flour
1/2 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 large egg, room temperature
1 cup 2% milk
1/4 cup butter, melted
1/4 cup honey

Steps:

  • Preheat oven to 400°. In a large bowl, combine flour, sugar, baking powder and salt. In a small bowl, combine egg, milk, butter and honey. Stir into dry ingredients just until moistened. , Fill greased or paper-lined muffin cups three-fourths full. Bake until a toothpick inserted in center comes out clean, 15-18 minutes. ¾ cup whole wheat flour
¾ cup white sugar
¼ cup oat bran
¼ cup quick cooking oats

½ cup chopped walnuts
1 banana, mashed
1 cup buttermilk

My first batch was tasty and wonderfully moist, but a bit on the heavy side, so I made a few modifications, and came up with a lighter muffin. I'm posting here for others to try, and welcome your feedback and suggestions.

2 cups flour
2 teaspoons cinnamon
1 tablespoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon nutmeg
1/4 cup coconut oil
1/4 cup honey or 1/4 cup maple syrup
3/4 cup brown sugar (if you prefer a sweet muffin)
3 eggs, lightly beaten
1/2 cup Greek yogurt
2 cups almond paste left over from making almond milk (or other nut paste)
2 medium bananas, mashed or 1 cup applesauce
1 teaspoon vanilla or 1 teaspoon almond extract
1 -2 cup raisins or 1 -2 cup chocolate chips

Steps:

  • Preheat oven to 325 degrees fahrenheit.
  • Sift together dry ingredients: flour, cinnamon, baking powder, baking soda, salt, and nutmeg.

1 pkg. (3 oz.) JELL-O Orange Flavor Gelatin
2 tsp. ground cinnamon
1 egg
1 cup canned pumpkin
3/4 cup orange juice
1 Gala apple, chopped
1/2 cup raisins
1/2 cup chopped walnuts

Steps:

  • Heat oven to 400ºF.
