1 tablespoon olive oil
2 teaspoons butter,
4 (6-ounce) skinless salmon fillets, ((170 grams each))
1/4 cup fresh orange juice, ((about 1/2 an orange))
3 tablespoons honey
2 tablespoons low-sodium soy sauce
4 cloves garlic, (crushed or minced)
salt and cracked black pepper, (to taste)
1/2 an orange, (sliced to serve)

Steps:

  • Heat butter (or oil) in a pan or skillet over medium-high heat. Sear salmon skin-side up for 3-4 minutes. Flip and sear for 2 minutes.
  • Pour in the orange juice and allow to reduce to half the quantity (it takes about 1 minute to reduce down if your pan is hot enough). Add the garlic and cook until fragrant (30 seconds). Move the salmon to the sides of the pan and add in the honey and soy sauce, stirring well to combine all of the flavours together.
  • Bring to a simmer until reduced to a nice syrup (this takes about another 30 seconds to 1 minute), and move the salmon around in the sauce to evenly coat. Remove from heat once the salmon is cooked to your liking.
  • Season with salt and pepper to your tastes. Drizzle with the sauce to serve. Best served over rice, noodles, steamed vegetables or with a salad.

1/4 cup orange juice
1/4 cup honey
2 green onions, thinly sliced

1/3 cup orange juice
1/3 cup light soy sauce
3 tablespoons canola oil
3 tablespoons ketchup
1 1/2 teaspoons honey
1/2 teaspoon ground ginger
2 garlic cloves, minced
1 tablespoon orange zest
1 -1 1/2 lb salmon steaks or 1 -1 1/2 lb salmon fillet

Steps:

  • Mix first eight ingredients in a glass dish.
  • I lightly slash the tops of the filets to allow the marinade to penetrate the fish better. Add salmon, turn to coat. Cover and refrigerate 1 hour.
  • Drain salmon, reserving marinade.
  • Grill for 5 minutes, brush with marinade, turn and grill other side for 5 more minutes. Continue until salmon flakes easily when tested with fork.
  • Can also be done under the broiler.

1/2 cup honey
1/2 cup mustard, dijon
1 medium lemon
1 tablespoon olive oil
1/2 teaspoon paprika
1/4 teaspoon salt

16 ounce salmon
2 tablespoon butter, unsalted
4 clove garlic
1 cup cherry tomatoes
1/4 teaspoon salt
1/4 teaspoon black pepper, ground
2 medium pear

Steps:

  • Preheat oven to 400 degrees.
  • Cook linguini to al dente, according to package instructions.
  • Line a baking sheet with a large piece of foil to fold over and seal in salmon, creating a packet.
  • In a small bowl whisk together the honey, mustard, juice of half the lemon, olive oil, paprika, 1/4 teaspoon salt and 1/4 teaspoon pepper.
  • Place salmon onto the foil. Drizzle with the honey mixture and seal the foil over the salmon.
  • Bake for 10-15 minutes, or until the fish flakes easily.
  • Meanwhile, melt 2 tablespoons of butter in a large skillet. Add the minced garlic; saute for 1 minute. Add tomatoes, salt and pepper. Saute for 2-3 minutes; add linguini and toss to coat.

  • Mix together soy sauce, honey, ginger, garlic spring onions and lime juice - taste to your liking and season with black pepper.
  • Rinse the fish with clean water and gently pat dry with kitchen paper.
  • Pour the sauce over the fish in a large bowl, making sure the fillets are covered. Seal the bowl with cling film and leave to marinade in the fridge for 20 minutes.
  • Once marinaded, loosely wrap the fish in individual foil parcels with a couple of spoonfuls of the marinade, leaving a 1 inch gap in the top of the foil.
  • Place on a tray in a pre-heated oven at around 160°C for 15-20 minutes. Pour the remaining marinade into the parcels half way through cooking. Meanwhile, cook your rice or noodles.
