2 1 1/4- to 1 1/2-pound acorn squash
3 tablespoons honey
1 tablespoon reduced-sodium soy sauce
2 teaspoons rice vinegar
1 1/2 teaspoons minced peeled fresh ginger
1 garlic clove, minced

Steps:

  • Preheat oven to 450°F. Line large baking sheet with foil. Spray with nonstick vegetable oil spray. Cut off both ends of each squash. Cut each squash crosswise into 4 rings. Scoop out seeds and discard. Place squash rings in single layer on prepared baking sheet. Cover baking sheet tightly with foil. Bake until squash begins to soften, about 15 minutes.

1/4 cup liquid honey
2 tablespoons soy sauce
1 clove garlic, minced
1/4 teaspoon salt
1/4 teaspoon pepper
2 acorn squash (2 1/2 lbs total) or 1 butternut squash (2 1/4 lbs)

Steps:

  • Whisk first 5 ingredients together in a large bowl.
  • Halve each squash crosswise, peel & scoop out seeds.
  • Cut into 1 inch thick rings & toss in honey mixture until well coated.
  • At this point, you can cover & refrigerate for up to 6 hours.
  • Arrange squash rings on a greased, foil lined, rimmed baking sheet & drizzle with honey mixture.

½ cup parmesan cheese, grated
2 teaspoons garlic powder
1 teaspoon paprika
1 teaspoon dried basil

½ teaspoon black pepper
3 large eggs
1 cup all-purpose flour
¼ cup dijon mustard
1 tablespoon whole grain mustard
1 tablespoon honey
