Steps:
- Stir together all ingredients except sugar in a bowl.
- Cook sugar in a dry heavy saucepan over moderate heat, undisturbed, until it begins to melt. Continue to cook, stirring occasionally with a fork, until sugar is melted into a deep golden caramel. Tilt pan and carefully pour in hoisin mixture (caramel will harden and steam vigorously). Cook over moderately low heat, stirring, until caramel is dissolved and sauce is thickened, 6 to 8 minutes. Cool to room temperature. Serve with shrimp, swordfish, pork, or chicken.

Tips:
- Use high-quality ingredients: Start with top-notch soy sauce, rice vinegar, and hoisin sauce. These are the foundation of the sauce, so don't skimp on quality.
- Simmer the sauce: This allows the flavors to meld and develop. Be patient and let the sauce simmer for at least 30 minutes, or up to an hour.
- Adjust the sweetness and spiciness to your liking: The sauce should be sweet, but not too sweet. It should also have a hint of spiciness, but not too much. Add more sugar or honey if you want it sweeter, or more chili sauce if you want it spicier.
- Use the sauce for a variety of dishes: This sauce is great on chicken, pork, beef, or tofu. It can also be used as a dipping sauce for dumplings, spring rolls, or egg rolls.
