HORSERADISH MASHED POTATOES

Horseradish Mashed Potatoes image

Categories     Milk/Cream     Potato     Side     Horseradish     Winter     Bon Appétit     Sugar Conscious     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added

Yield Serves 6 as side-dish

Number Of Ingredients 4

1 cup whipping cream
1/2 cup chicken stock or canned low-salt chicken broth
1/2 cup coarsely grated peeled fresh horseradish
2 3/4 pounds russet potatoes, peeled, cut into 1-inch pieces

Steps:

  • Combine cream, stock and horseradish in heavy large saucepan. Bring to boil; reduce heat to low and simmer until horseradish is tender, about 15 minutes. Meanwhile, cook potatoes in large pot of boiling salted water until tender, about 15 minutes. Drain. Return to same pot. Add horseradish mixture; mash until smooth. Season with salt and pepper.

Tips:

  • Yukon Gold potatoes are recommended for their creamy texture and buttery flavor. Russet potatoes can also be used, but they may need more butter or cream to achieve the desired consistency.
  • For a smoother mash, peel the potatoes before boiling. Leaving the skins on will give the potatoes a more rustic texture.
  • Salt the water when boiling the potatoes. This will help to flavor the potatoes and prevent them from becoming bland.
  • Drain the potatoes thoroughly before mashing to prevent the potatoes from becoming watery.
  • Use a potato ricer or food mill to achieve a light and fluffy mash. A regular potato masher can also be used, but it will take more effort to achieve the same result.
  • Add the butter, cream, and horseradish gradually, tasting the potatoes as you go. This will help you to avoid over-seasoning the potatoes.
  • Garnish the mashed potatoes with fresh chives or parsley for a pop of color and flavor.

Conclusion:

Horseradish and sour cream mashed potatoes are a delicious and easy-to-make side dish that is perfect for any occasion. The horseradish adds a subtle kick of spice that pairs perfectly with the creamy potatoes. These mashed potatoes are sure to be a hit with your family and friends.
