1/4 cup ketchup
1/4 cup mayonnaise
1 tablespoon red wine vinegar
1 teaspoon celery seeds
1 teaspoon hot smoked paprika
Kosher salt and freshly ground black pepper
1/2 head green cabbage, finely shredded
1 medium carrot, peeled and shredded
6 green onions, green and pale green parts only, thinly sliced
3 tablespoons grated Spanish onion
1 cup ketchup
2 tablespoons pureed chipotles in adobo
1 cup Dijon mustard
1/4 cup prepared horseradish, drained
1 1/2 pounds ground chuck (80 percent lean) or ground turkey (mix of white and dark meat)
Canola oil, for brushing
Kosher salt and freshly ground black pepper
8 slices American, cheddar, Monterey Jack, pepper Jack or Swiss
4 hamburger buns
8 ounces potato chips, optional

Steps:

4 croissants, halved and toasted
8 slices aged Cheddar

1 bunch watercress, washed and dried
1/2 cup prepared mayonnaise
1 tablespoon whole grain mustard
2 tablespoons prepared horseradish, drained

Steps:

3/4 cup creme fraiche
2 tablespoons prepared horseradish, drained
2 teaspoons whole grain mustard
Salt and freshly ground black pepper
1 cup all-purpose flour
1/2 cup, plus 1 tablespoon fine yellow or white cornmeal
2 tablespoons granulated sugar
2 teaspoons kosher salt
1 tablespoon baking powder
2 large eggs, separated
3/4 cup whole milk
2 tablespoons unsalted butter, melted and cooled, plus 1/4 cup more for frying
Horseradish creme fraiche, for garnish, recipe follows
1 smoked trout, flaked with fork
Fresh flat-leaf parsley leaves, for garnish
Finely chopped fresh chives, for garnish

Steps:

  • For the horseradish creme fraiche: Whisk together the creme fraiche, horseradish and mustard in a small bowl. Season with salt, and pepper, cover and refrigerate for at least 1 hour to allow flavors to meld.

Cook until lightly golden brown on each side, about 1 1/2 minutes per side. Remove to a baking sheet and keep warm in the oven until ready to serve. Top each cake with a small dollop of the creme fraiche and some of the trout. Garnish with parsley leaves and a sprinkling of chopped chives.

I love getting a mouthful of juicy burger and salty, crispy potato chips in one bite; it's a way to get a true contrast of textures into your cheeseburger. In fact, I make it an option to have all of the burgers at Bobby's Burger Palace "crunchified."

1 1/2 pounds ground chuck (80 percent lean) or ground turkey (90 percent lean)
Kosher salt and freshly ground black pepper

8 slices American cheese, each 1/4 inch thick
4 potato hamburger buns, split; toasted, if desired (see Cook's Note)
4 slices beefsteak tomato (optional)
4 leaves romaine lettuce (optional)

  • Divide the meat into 4 equal portions (about 6 ounces each). Form each portion loosely into a 3/4-inch-thick burger and make a deep depression in the center with your thumb. Season both sides of each burger with salt and pepper.
