Steps:
- Boil or microwave potatoes until tender.
- Meanwhile, chop bacon and saute until cooked, but not crispy (unless you're really stuck on crispy bacon).
- Reduce heat, saute onion until translucent.
- Don't drain the fat.
- Add vinegar, sugar, mustard, and mustard seed.
- Whisk 2 tbs flour into stock, add to pan, bring to boil.
- Taste mixture, and adjust sugar-to-vinegar ratio, if necessary.
- Slice potatoes, and coat with dressing.
Tips:
- Choose the right potatoes: Waxy potatoes, such as Yukon Gold or Red Bliss, are best for German potato salad because they hold their shape well when cooked.
- Boil the potatoes until they are tender but still firm: Overcooked potatoes will become mushy and fall apart in the salad.
- Cool the potatoes completely before dressing them: This will help prevent the salad from becoming watery.
- Use a light and tangy dressing: A simple vinaigrette made with vinegar, oil, mustard, and herbs is a classic choice for German potato salad.
- Add some bacon or sausage for extra flavor: These meats are a great addition to German potato salad, but they are optional.
- Garnish the salad with fresh herbs, such as parsley, chives, or dill: This will add a pop of color and flavor to the dish.
Conclusion:
German potato salad is a delicious and versatile dish that can be served as a side dish or a main course. It is perfect for potlucks, picnics, and summer gatherings. With its creamy dressing, tender potatoes, and flavorful bacon or sausage, German potato salad is sure to be a hit with everyone at your table.
