GRILLED CHEESY LOADED POTATOES

Grilled Cheesy Loaded Potatoes image

This recipe is sponsored by Cabot Creamery Co-operative. This dish satisfies your craving for a fully loaded baked potato yet doesn't require turning on the oven. It's got all your favorite fixings -- cheese, bacon and sour cream -- but is cooked entirely on the grill!

Provided by Food Network Kitchen

Categories     side-dish

Time 1h

Yield 6 servings

Number Of Ingredients 6

8 slices bacon, cut into 1-inch pieces
3 russet potatoes, thinly sliced
Kosher salt and freshly ground black pepper
8 ounces Cheddar, grated
2 tablespoons sour cream
3 scallions, sliced

Steps:

  • Prepare a grill for direct and indirect heat: For gas grills (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes, turn off one of the side burners and turn the remaining burners down to medium. For charcoal grills, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. Set up a drip pan on the other side to avoid flare-ups. (Be sure to consult the grill manufacturer's guide for best results.)
  • Heat a 10-inch cast-iron skillet on direct heat and add the bacon; cook, stirring often, until crispy, about 5 minutes. Remove the bacon with a slotted spoon to a paper-towel lined plate; set aside.
  • Add the potatoes and sprinkle with salt and pepper. Stir to coat with the bacon fat, then move to indirect heat and cover the grill. Cook, uncovering the grill and stirring every 5 minutes, until the potatoes are tender, about 20 minutes.
  • Sprinkle with the Cheddar and move back to direct heat. Cook, uncovered, until the potato bottoms are golden and the cheese is melted, about 10 minutes, depending on the heat of your grill. Let cool for 10 minutes, then dot with the sour cream and sprinkle with the scallions and reserved bacon.

Tips:

  • Choose the right potatoes: For grilling, choose firm, waxy potatoes like Yukon Gold, Red Bliss, or fingerling potatoes. These potatoes hold their shape well and won't fall apart on the grill.
  • Cut the potatoes evenly: This will help them cook evenly. If you're using a grill basket, cut the potatoes into 1-inch cubes. If you're grilling the potatoes directly on the grates, cut them into thin slices.
  • Toss the potatoes in oil and seasonings: This will help them brown and flavor them. You can use olive oil, vegetable oil, or melted butter. Season the potatoes with salt, pepper, garlic powder, onion powder, and any other desired herbs or spices.
  • Preheat your grill: This is important for getting a good sear on the potatoes. Preheat your grill to medium-high heat before adding the potatoes.
  • Grill the potatoes: If you're using a grill basket, place the potatoes in the basket and cook them for 10-15 minutes, shaking the basket occasionally. If you're grilling the potatoes directly on the grates, cook them for 5-7 minutes per side, or until they're tender and browned.

Conclusion:

Grilled potatoes are a delicious and versatile side dish that can be enjoyed with a variety of meals. They're perfect for summer cookouts, but they can also be made indoors on a grill pan. With a few simple tips, you can grill potatoes that are perfectly tender and flavorful. So fire up your grill and give these recipes a try!
