Macaroni salad ((I went with prepared Mac Salad from my local deli counter))
2 grilled Cheeseburgers
Mustard ((I used Dijon))
Meat hot sauce
Fresh chopped onions
Ketchup
Frank's Red Hot
Day-old Italian bread

Steps:

  • Begin by placing the fries and mac salad onto your plate.
  • Next add the cheeseburgers (or hot dogs) on top.
  • Drizzle some mustard onto this.
  • Pour a generous ladle of meat hot sauce over the plate.
  • Sprinkle with chopped raw onions.
  • Cut up your burgers and mix everything together with plenty of ketchup and Frank's Red Hot and sop up the juices with the Italian bread.

1 medium onion, chopped
1 garlic clove, minced
1 tablespoon oil
1 lb triple-ground beef
1 cup water
1 (6 ounce) can tomato paste
1/2 tablespoon brown sugar
1 teaspoon ground black pepper
3/4 teaspoon cayenne pepper
1 teaspoon chili powder
1 1/2 teaspoons paprika
1/2 teaspoon ground cumin
1/2 teaspoon allspice
1/4 teaspoon cinnamon
1/2 teaspoon powdered clove
1 teaspoon salt (to taste)

Steps:

  • In a large skillet, fry chopped onion and garlic in oil until soft.
  • Add meat, stirring constantly with fork to keep it's texture fine.

½ pound ground beef
1 ¼ cups water
1 tablespoon white vinegar
½ teaspoon paprika
½ teaspoon black pepper
¼ teaspoon chili powder
¼ teaspoon cayenne pepper

1 medium turnip
1 small rutabaga
4 medium carrots, halved crosswise
4 medium leeks (white portion only), sliced
12 fresh cauliflowerets
MUSTARD SAUCE:
1/4 cup butter, cubed
2 tablespoons all-purpose flour
1/4 teaspoon salt, optional
Pinch pepper
1 cup milk
1 to 2 teaspoons Dijon mustard

Steps:

  • Peel kohlrabi, turnip and rutabaga; cut into 1/4-in. slices. Halve the kohlrabi and turnip slices; quarter the rutabaga slices. Place all vegetables in a large saucepan and cover with water; cook until crisp-tender. , Meanwhile, melt butter in a small saucepan; stir in flour. Bring to a boil; cook and stir for 2 minutes. OK First a garbage plate is baked beans[grandma browns],macaroni salad,fried potatos,a coupla fried hot dogs,[or burgers] 1/4 loaf french bread,covered with chopped onions,mustard,and hot sauce.[or whatever you want].I got this recipe back in '71 from a cook i knew that worked at the diner that originated it.At the time it was best served at 3am after a rough night of "socializing" with friends.Allthough i no longer partake of the follys of my youth.I still enjoy a good plate every now and then.The pict i posted is my "DIET" version of the plate.The original is about 5lbs of chow and about 10'0000 calories.And if you could do one a them babies you were good for about 3 days.

  • cook burger and chopped onions in lrg frypan till onions are tanslucent,just keep mashing allong and frying.
  • what i do then is sometimes i drain it sometimes i dont,depends how greasy i wanna feel,put in blender and pulse till very fine consistancy.add a little water to keep it loose
  • then i put the burger and onion back in frypan,add everything else.Sometimes i add the crisco sometimes not but i find ya do need a little bit of it maybee a glop or two,and simmer adding water as i go to loosen it up to whatever consistancy i want.I usually let it go a long time cuz i love the smell of a greasy greek allnight diner.Brings me back to the craziness of my youth.I hope it works for you too.

If you are from the Rochester area that phrase would make your mouth water. This is any drunk college kids best friend. It is a mixture of meat, carbs, and more carbs piled onto a foam container found in Nick Tahou's and "hots" food joints all over the Rochester area. For about 6 bucks (including tip) you get this plate plus a soda, not too shabby. They have a veggie version, fish, and my favorite--the white hot version. When I left the Rochester to go to school the first thing I would do when I came home was got to a "hots" and order a garbage plate. Also dont expect to finish this unless you are drunk. (I put the direct link on here before but it messed up the rest of the recipe for some reason, so youre gonna have to do it the hard way lol) Also times are approx. if you make your own sauce or not. Also to speed things up I use Recipe #226112 for the potatoes. This recipe is scaled to one, but it can really feed at least four people.... but whats the fun in sharing a garbage plate??

  • TO MAKE SPECIAL SAUCE:.
  • In large skillet fry chopped onion and garlic in oil until soft. Add meat, stirring constantly with fork to keep its texture fine.

  • Then add sugar and spices. Cook 30 minutes, adding water if needed.
  • ASSEMBLY:.
  • Mix together the noodles, mayo, celery, seasoning, and carrots and place into a large square foam container (or plate, but not as authentic).
  • Fry potatoes in butter until very crispy then put next to mac salad on plate.
  • Place OPTIONAL beans of plate if needed.
  • Cook hamburger until well done and top with sliced cheese.
  • Then place burgers ON TOP of the mac salad and home fries.
  • Mix together about equal parts mustard and horseradish and pour on top of burgers and top with optional onions.
  • Pour hot sauce or VERY LARGE spoonfuls of special sauce and a HUGE glob of ketchup over burgers (some like to stir everything together so its one huge mess).
  • Eat with plastic fork, or just use the bread as a spoon and try not to pass out. This should take about an hour to finish.
  • YUM, every drunk college kids dream food.

My version of Rochester garbage plate, trash plate, picnic plate hot sauce, which stems from experimenting with multiple recipes floating around the internet. This version has some tomato, and is not watery. Add to hot dogs, burgers, fries, home fries, breakfast sandwiches, or use your imagination. I once made a big batch of this for a group in California (who had never heard of it before), and they ended up enjoying it most on waffles with maple syrup.

1 lb ground beef
1 tablespoon flour
1 tablespoon butter or 1 tablespoon beef fat
2 cups water
1 teaspoon paprika
1 teaspoon chili powder
1 teaspoon cayenne pepper
1 teaspoon salt
1/2 teaspoon cumin
1/2 teaspoon thyme
1/2 teaspoon allspice
1/2 teaspoon clove
1/2 teaspoon cinnamon
2 tablespoons white vinegar or 2 tablespoons apple cider vinegar
3 tablespoons tomato paste

Steps:

  • Brown the beef and drain.
  • If you are using whole spices/herbs, which I prefer for this, add all to a mortar and pestle them into a fine powder. If you are using ground spices/herbs, just mix them all together in a bowl and set aside. Note that you'll need more than the measurements listed above if you're using whole spices like allspice and cloves. In the end you want the ground quantities to roughly match the amounts listed in the ingredient list. None of these measurements is super critical. After you make this, you'll likely tweak the spices to suit your taste anyway.
  • In the beef browning pan, make a roux by cooking the flour with either 1 tablespoon of the beef fat or butter. I've done it both ways, couldn't tell the difference.
  • Add the roux to a 4qt saucepan over medium low heat. Dump the beef/water mix in there. Add the spice mixture, vinegar, and tomato paste and whisk until it's all blended.
  • Bring to a simmer, stirring often. Then reduce the heat to low and let it simmer uncovered for an hour or two, stirring occasionally to keep the meat from settling to the bottom of the pan and burning.
  • Finally, grind it up a bit right in the saucepan using a stick/immersion blender. You don't want to go too far with this and make a milkshake, we're just trying to break down some of the big chunks so that the result is like finely ground beef.
