- Preheat the oven to 425 degrees F.
- In a large ovenproof skillet, like a cast-iron skillet, over medium heat, warm up the oil. Then add the onion and sauté until lightly browned, about 5 minutes. Then add the minced garlic and cook another 30 seconds. Finally, add the spinach and saute until wilted, about 3 minutes. Transfer to a bowl and set aside.
- Into the same skillet, warm the milk and then add the cream cheese. Whisk until melted, 2 to 3 minutes, and then pour in the Worcestershire sauce and whisk to combine. Stir in the spinach and onion mixture, the shredded mozzarella cheese and chopped bacon. Season with salt and pepper to taste. Bring to a low simmer and cook for 4 to 5 minutes.
- Top with parmesan cheese and transfer the skillet to the oven and bake for 8 to 10 minutes, or until nicely browned. Serve with pita or tortilla chips.

- Remove the stems from the spinach and wash, drain and pat dry thoroughly. Place into a large mixing bowl and set aside.
- Place the eggs into an electric kettle and cover with cold water by at least 1-inch. Turn the kettle on. Once the water comes to a boil, the kettle will turn itself off. Leave the eggs in the water for 15 minutes. Remove and peel off the shell. Slice each egg into 8 pieces and set aside.
- While the eggs are cooking, fry the bacon and remove to a paper towel to drain, reserving 3 tablespoons of the rendered fat. Crumble the bacon and set aside.
- Transfer the fat to a small saucepan set over low heat and whisk in the red wine vinegar, sugar and Dijon mustard. Season with a small pinch each of kosher salt and black pepper.
- Add the mushrooms and the sliced onion to the spinach and toss. Add the dressing and bacon and toss to combine. Divide the spinach between 4 plates or bowls and evenly divide the egg among them. Season with pepper, as desired. Serve immediately.

- Preheat oven to 375 degrees F (190 degrees C).
- Combine cream cheese and mayonnaise in a large bowl and mix well. Add spinach, water chestnuts, bacon, Cheddar cheese, green onions, dill, garlic, seasoned salt, and pepper and stir until well combined.
