- Preheat the oven to 375 degrees F. Generously grease a large rimmed baking sheet with olive oil.
- Arrange the fillets on the baking sheet in one layer. Drizzle the 2 tablespoons of olive oil over the fish and season with salt and black pepper. Bake until the fish is flaky and just fully cooked through, about 12 minutes.

- Rinse the Branzino fish filets and pat it dry with a paper towel.
- Dash of salt on one side of the fish filets only. Do not salt both sides. Fish do not need a lot of salt. Add black pepper.
- With frying pan on stove top, turn heat on medium high.
- Put butter and extra virgin olive oil in pan. Wait until butter melts and sizzles, then add garlic.
- When garlic is fragrant and lightly brown, add in the fresh basil. This will crisp up the basil.
- Immediately, put in the Branzino fish filets and pan fry for 3 minutes.
- Pour lemon juice onto fish into pan. Flip over fish filets and pan fry for another 3 minutes or until nice crisp brown colors on the edges.

- Preheat oven to 450 degrees. Oil a large rimmed baking sheet.
- Rinse fish well, pat dry with paper towels, and place on baking sheet. In the cavity of each fish, place 2 lemon slices, 1 sprig dill, 1/2 of the fennel, 2 sprigs parsley, and 1/2 of the reserved fennel fronds. Season the cavity and exterior of each fish with salt and pepper. Lay 3 slices lemon over the top of each fish. Drizzle oil lightly over fish and roast until cooked through, about 15 minutes.
- Transfer fish to serving plates and serve with lemon wedges.
SALT-BAKED BRANZINO
Steps:
- Preheat oven to 400°F.
- Place salt in a bowl and add egg whites 1 at a time, stirring, until mixture looks like wet sand (the number will vary).
- Rinse fish and pat dry. Place fish on a parchment-lined large baking sheet and divide remaining ingredients between cavities of fish.
- Firmly pat half of salt evenly over each fish to cover fish completely.
