Six 3- to 4-ounce branzino fillets, bones removed
Kosher salt and freshly ground black pepper
2 lemons
2 oranges
1/2 cup flat-leaf parsley, finely chopped
1 tablespoon good-quality extra-virgin olive oil
Pinch crushed red pepper flakes

Steps:

  • Preheat the oven to 375 degrees F. Generously grease a large rimmed baking sheet with olive oil.
  • Arrange the fillets on the baking sheet in one layer. Drizzle the 2 tablespoons of olive oil over the fish and season with salt and black pepper. Bake until the fish is flaky and just fully cooked through, about 12 minutes.

One 2-pound whole branzino
3 cloves garlic, sliced
Olive oil, for drizzling
Kosher salt and freshly ground black pepper
3 lemons, sliced
1 bunch thyme
1 bunch flat-leaf parsley, leaves chopped

Steps:

  • Preheat the oven to 500 degrees F. Set a wire rack in a rimmed baking sheet.
  • Cut slits into the branzino skin 1 inch apart, being careful not to cut through the spine. Stuff each slit with the garlic then drizzle the fish with oil. Season heavily with salt and pepper. Stuff the fish cavity with the lemon slices and the thyme sprigs. Transfer the fish to the wire rack and roast in the oven until the flesh is flaky and cooked through, about 14 minutes.

1 to 1 1/2 pounds whole branzino, scaled and gutted
Extra-virgin olive oil, for rubbing
Kosher salt and freshly ground pepper
2 lemons, 1 sliced into thin rounds, 1 cut into 6 wedges
1 small bunch thyme sprigs

  • Preheat oven to 450 degrees. Pat fish dry; rub cavity and skin with oil, then season generously with salt and pepper. Stuff cavity with lemon slices and a few sprigs of thyme. 2 -3 branzino fish fillets
3 tablespoons extra virgin olive oil
1 -2 tablespoon unsalted butter
2 tablespoons minced garlic
1/2 lemon, juice of
6 fresh basil leaves, chopped
1 dash of salt on only one side fish fillet
1/2 teaspoon fresh ground pepper
1 dash minced parsley, on top of dish (optional)

Steps:

  • Rinse the Branzino fish filets and pat it dry with a paper towel.
  • Dash of salt on one side of the fish filets only. Do not salt both sides. Fish do not need a lot of salt. Add black pepper.
  • With frying pan on stove top, turn heat on medium high.
  • Put butter and extra virgin olive oil in pan. Wait until butter melts and sizzles, then add garlic.
  • When garlic is fragrant and lightly brown, add in the fresh basil. This will crisp up the basil.

2 1- to 1 1/2-pound whole branzini, scaled, gutted, and cleaned
Coarse salt and freshly ground black pepper
1 lemon, very thinly sliced, plus wedges for serving
2 large sprigs fresh dill
1/4 small bulb fennel, cored and very thinly sliced (about 1 cup), fronds reserved
4 sprigs fresh flat-leaf parsley

Steps:

  • Preheat oven to 450 degrees. Oil a large rimmed baking sheet.
  • Rinse fish well, pat dry with paper towels, and place on baking sheet. In the cavity of each fish, place 2 lemon slices, 1 sprig dill, 1/2 of the fennel, 2 sprigs parsley, and 1/2 of the reserved fennel fronds. 3 cups fine sea salt (1 3/4 lb), preferably unrefined
2 to 4 large egg whites
2 (1-lb) whole branzini (European sea bass) or small sea bass, cleaned, heads and tails left intact
6 fresh parsley sprigs
4 fresh rosemary sprigs
2 garlic cloves, sliced
4 lemon slices, halved
Special equipment: parchment paper

Steps:

  • Preheat oven to 400°F.
  • Place salt in a bowl and add egg whites 1 at a time, stirring, until mixture looks like wet sand (the number will vary).
  • Rinse fish and pat dry. Place fish on a parchment-lined large baking sheet and divide remaining ingredients between cavities of fish.
  • Firmly pat half of salt evenly over each fish to cover fish completely.
