1 (.25 ounce) package unflavored gelatin
1 teaspoon ground cinnamon
½ teaspoon ground ginger
½ teaspoon ground nutmeg
½ teaspoon salt
1 (14 ounce) can sweetened condensed milk
2 eggs, beaten
1 (15 ounce) can pumpkin puree

Steps:

  • In a heavy saucepan combine gelatin, cinnamon, ginger, nutmeg, and salt. Stir in condensed milk and beaten eggs, mixing well. Let stand one minute, then place on burner over low heat, stirring constantly for about 10 minutes, or until gelatin dissolves and mixture thickens. Remove from heat.

1 egg yolk
1 teaspoon water
2 cups canned solid-pack pumpkin
2/3 cup light brown sugar, firmly packed
2 teaspoons cinnamon
1 teaspoon ground ginger
1/2 teaspoon salt
1 cup heavy cream
2/3 cup milk
2 large eggs
1/4 cup cognac or 1/4 cup other brandy

Steps:

  • Preheat oven to 375 degrees.
  • In a bowl whisk together pumpkin, brown sugar, cinnamon, ginger, salt, heavy cream, milk, eggs, and Cognac until the filling is smooth.

1 can(s) (large) pumpkin, plain
1 1/2 cup(s) sugar
1 teaspoon(s) cinnamon
