- Remove the chorizo from the casing, break up and fry until crumbly. Remove with a slotted spoon, and set aside. Drain all of the grease except two tablespoons. Add the onions and potatos and fry until the onions are soft and the potatoes are slighty browned. add the chorizo back in the skillet along with the eggs and scramble until the eggs are set. Serve with tortillas and top with cheese and salsa.
Tips:
- Use high-quality chorizo for the best flavor. Look for a chorizo that is made with fresh, flavorful pork and spices.
- If you don't have access to fresh chorizo, you can use a good quality dry-cured chorizo. Just be sure to soak it in warm water for 30 minutes before cooking to soften it.
- Don't overcrowd the pan when cooking the chorizo. This will prevent it from cooking evenly and becoming dry.
- Cook the chorizo over medium heat so that it has a chance to render its fat and develop flavor.
- Once the chorizo is cooked, remove it from the pan and set it aside. Then, add the eggs to the pan and cook them to your desired doneness.
- Serve the huevos con chorizo with your favorite sides, such as rice, beans, or tortillas.
