2 russet potatoes, peeled and diced
1/2 pound bulk or chopped chorizo
1 onion, chopped
10 eggs
Salt an freshly ground pepper to taste
1/2 bunch cilantro leaves, chopped
2 green onions, sliced for garnish
Grated Panela cheese for garnish

  • Cook the potatoes in boiling salted water 10 minutes. Drain and reserve.

8 ounces chorizo sausage (mexican style)
2 cups frozen diced potatoes
1 onion, chopped
8 eggs
8 flour tortillas
8 ounces cheese, shredded (cheddar or jack)
salsa, to taste

Steps:

  • Remove the chorizo from the casing, break up and fry until crumbly. Remove with a slotted spoon, and set aside. Drain all of the grease except two tablespoons. Add the onions and potatos and fry until the onions are soft and the potatoes are slighty browned. add the chorizo back in the skillet along with the eggs and scramble until the eggs are set. Serve with tortillas and top with cheese and salsa.
