1-1/2 pounds ground beef
2 celery ribs, sliced
1 medium onion, chopped
1/2 cup chopped green pepper
1 garlic clove, minced
1 can (16 ounces) pork and beans
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1 can (6 ounces) tomato paste
3/4 cup water
1 teaspoon salt
1 teaspoon paprika

Steps:

  • In a skillet, cook beef, celery, onion, green pepper and garlic over medium heat until the meat is no longer pink and vegetables are tender; drain. , Stir in the remaining ingredients. Simmer, uncovered, for 30 minutes or until heated through.

3 thick-sliced bacon strips, cut into quarters
1 cup fresh or frozen corn
1 medium red onion, halved and thinly sliced
2 cups refrigerated fully cooked barbecued shredded pork
1/4 cup crumbled goat cheese
1/4 cup minced fresh cilantro

Steps:

  • Scrub and pierce potatoes; place on a microwave-safe plate. Microwave, uncovered, on high for 12-15 minutes or until tender, turning once., In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain, reserving 1 tablespoon drippings. 10 cups large chunks of peeled potatoes
8 slices bacon
3 large onions, sliced
1 ½ teaspoons salt

Steps:

  • Place potatoes in large pot. Fill the pot with cold water until it is half an inch above the top of the potatoes. Add the salt to the water and stir briefly to dissolve. Bring water to a boil and cook until tender, about 15 to 20 minutes. Drain and set aside to cool.
