After you taste this Alfredo sauce you will probably make it on a regular basis. It's fast and easy, and you probably already have all of the ingredients. It's a great compromise between "I don't feel like cooking" and "I don't want to eat toast for dinner."

Number Of Ingredients 16

3 cups of any small pasta shape
2 tablespoons Earth Balance
1 cup soymilk
2 teaspoons Dijon or stone-ground mustard
3 tablespoons low-sodium tamari or soy sauce
1 tablespoon tahini
1 tablespoon fresh lemon juice
1/4 cup nutritional yeast
1/4 rounded cup raw, unsalted cashews
2 to 4 garlic cloves (optional)
1/2 teaspoon paprika
1 pinch nutmeg
1 pinch salt
black pepper, to taste
2 tablespoons of fresh herbs (your favorite)
2 cups steamed broccoli florets or any other veggie

Steps:

  • Bring a pot of salted water to boil and add the noodles. Cook until tender but not mushy, about 5 to 8 minutes.
  • Meanwhile, combine all of the sauce ingredients together in a blender and blend on high until very smooth. If your blender is having issues with grinding the nuts smoothly, you can strain the sauce. (Or you can keep them as is and pretend it's a "textural feature".)
  • When the noodles are finished cooking, drain them well. Add the noodles back to the (now empty but still hot) pot and pour as much sauce as you want over them. Turn the heat on and gently stir until the noodles are piping hot, adding in your optional veggies or herbs if you're using them. Serve immediately.

3 cups whole wheat pasta
1 cup soymilk
1/3 cup raw unsalted cashews
1/4 cup nutritional yeast
3 tablespoons tamari or 3 tablespoons soy sauce
2 tablespoons Earth Balance margarine
1 tablespoon tahini
1 tablespoon lemon juice
2 teaspoons Dijon mustard
1/2 teaspoon paprika
1 pinch nutmeg
1 pinch salt
pepper
2 -4 garlic cloves (optional)

Steps:

  • Boil the pasta until tender but not mushy.
  • Combine everything else in the blender and blend until smooth.
  • Drain the noodles, return to the pot and pour the sauce over until well heated.
  • Would be great to mix in some cooked veggies too.
  • Serve hot.

I love any recipe for lasagna where I don't have to first cook the noodles. This is a different take on the traditional lasagna using fettuccine noodles instead of. Also, feel free to add ground beef to the sauce mix as this only calls for pepperoni's to be used.

1 (48 ounce) jar spaghetti sauce
1 (16 ounce) package spaghetti noodles, uncooked
20 ounces ricotta cheese
1 cup fresh parsley
4 ounces pepperoni, sliced
36 ounces Italian cheese blend, shredded, divided

Steps:

  • Spread 1 cup sauce in bottom of a 9x13 inch baking pan.
  • Carefully place 1/3 uncooked spaghetti noodles over sauce, making sure to coat spaghetti with sauce.
  • Combine the ricotta cheese and parsley.
  • Layer 2 cups ricotta mixture, 1/2 the pepperoni, 1 cup sauce and 1 cup cheese.
  • Top with remaining spaghetti noodles , 2 cups ricotta mixture, pepperoni, sauce and 1 cup cheese.
  • Top with remaining spaghetti and sauce, making sure sauce completely covers noodles.
  • Cover with foil.
  • Bake 375 degrees for 1 hour.
  • Uncover and bake 5 minutes longer.
  • Sprinkle with remaining cheese.
  • Let stand 10 minutes before serving.
