1 lb imitation crabmeat, roughly chopped
1 cup elbow macaroni, uncooked (or other small shell pasta)
1 medium bell pepper, chopped
1/4 cup celery, chopped (about 1 rib)
1/4 teaspoon onion salt (or more) or 2 tablespoons finely chopped onions
1/4 teaspoon creole seasoning, like Tony Chachere's (or more)
1/4 teaspoon ground black pepper or 1/4 teaspoon white pepper
1 dash garlic salt
2 tablespoons mayonnaise (or more)
1 tablespoon sour cream (optional)
1 medium tomatoes, seeded and diced (optional)

Steps:

  • Cook pasta as directed on package. Rinse until cool under cold tap water. Leave to drain well in a colander.
  • Chop crab meat in a medium bowl. Set aside.

1 (16 ounce) package imitation crabmeat, cut into bite-sized pieces
1 (6 ounce) can sliced black olives
1 medium red bell pepper, diced
3 stalks green onions (white and green parts), sliced
3 stalks celery, diced
1 ½ cups nonfat plain yogurt
¼ cup fat-free mayonnaise
1 tablespoon prepared yellow mustard
1 ½ teaspoons salt-free seasoning blend
1 ½ teaspoons soy sauce
1 teaspoon celery salt
¼ cup Italian vinaigrette

Steps:

1 cup elbow macaroni (or other small pasta), uncooked
1 medium bell pepper, chopped
1/4 cup celery (about 1 rib), chopped (optional)
1/4 teaspoon onion salt
1/4 teaspoon creole seasoning, or to taste (such as Tony Chachere's)
good pinch of garlic salt, or to taste
1/4 teaspoon ground black pepper, or white pepper
2 - 3 tablespoons mayo, as needed
1 medium, ripe but firm, tomato, seeded and diced (optional but recommended)

Steps:

  • Cook pasta as directed on package. Rinse until cool under tap water. Leave to drain well in a colander. Meanwhile, coarsely chop the crab meat in a medium bowl; set aside. In a large bowl, chop all desired veggies except for the tomato. Add pasta and seasonings to taste. Stir in desired amount of mayo. Gently fold in the crab meat. Refrigerate until serving time. I love this tangy pasta salad. It can be served on any day of the week, or at any family function, outing, or picnic. Or serve it during Lent, since it contains imitation crab meat.

8 oz pasta (l used radiatore nuggets)
About 1-1/2 teaspoons vegetable oil
2 tsp salt
1 c chopped broccoli
1/2 c thinly sliced baby carrots
2 Tbsp diced red onion
6 oz colby-jack cheese, cut into small chunks
5 oz imitation crab meat, cut into chunks (about 1 c.)
1 c hellmann's mayonnaise
1 c light ltalian salad dressing
2 Tbsp kraft grated parmesan cheese
28 grape tomatoes
freshly cracked black pepper, add according to taste

Steps:

  • 1. In a large pot of boiling water, add the vegetable oil and salt. Add the pasta, and cook pasta for 8 minutes and 30 seconds.
  • 2. During the last 30 seconds of cooking time, add the broccoli. After the 30 seconds, immediately drain and rinse the pasta and broccoli under cold water in a colander.
  • 3. While the pasta and broccoli is draining in the colander, add the carrots, onion, cheese, and imitation crab meat to a large bowl.
  • 4. In another bowl mix together, the mayonnaise and Italian dressing. Use 1-cup of the dressing to mix into the salad, and reserve the other cup for later.
  • 5. Incorporate the 1-cup of dressing into the large bowl of vegetables, cheese, and meat. Add the pasta and broccoli to the bowl; stir gently to mix the salad.
  • 6. Season the salad with a bit of the freshly cracked black pepper. Sprinkle the parmesan cheese over the salad, and gently fold in the grape tomatoes. Cover the salad, and place it in the refrigerator to chill.
  • 7. After 2-3 hours of refrigeration, and before serving the salad; stir in a 3/4 cup to 1-cup of the mayonnaise/Italian dressing. The extra dressing will keep the salad creamy and moist, even up to a day or two later.
