4 boneless skinless chicken breast halves (6 ounces each)
2 tablespoons olive oil
1 tablespoon butter
1 package (6 ounces) fresh baby spinach
1 cup salsa

Steps:

  • Pound chicken with a meat mallet to 1/2-in. thickness. In a large skillet, heat oil and butter over medium heat. Cook chicken 5-6 minutes on each side or until no longer pink. Remove and keep warm., Add spinach and salsa to pan; cook and stir 3-4 minutes or just until spinach is wilted. Serve with chicken.

I got this recipe years ago from a friend of the family and replaced ground beef with ground chicken. It's a good way to get kids to eat spinach. It is very comforting. Tastes great with some garlic bread and salad :) The photo shows it with beef..which is delicious.

1 pound(s) ground chicken (or turkey or beef)
1 - cloved minced garlic
2 tablespoon(s) olive oil
10 ounce(s) frozen spinach
1 medium chopped onion
1 pound(s) can spaghetti sauce w/ mushrooms
8 ounce(s) can tomato sauce
6 ounce(s) can tomato paste
7 ounce(s) pkg of elbow macaroni; cooked
2 cup(s) shredded italian cheese blend (or mozzarella or cheddar)
1/2 cup(s) bread crumbs, dry
2 - beaten eggs
- salt and pepper

Steps:

  • Preheat oven to 350. Brown the chicken, garlic and onions; drain. Cook the spinach according to microwave directions; squeeze dry-BUT SAVE THE JUICE.
  • Cook the macaroni while chicken and spinach is cooking; drain.
  • Add the spinach liquid to the chicken mixture; along with the sauces.
  • Combine the elbow noodles with the cheese, eggs, drained spinach, oil and bread crumbs. Put the noodle mix into a 13 x 9 inch baking pan. Top with the chicken mixture.
  • Bake for 30 mins. Let stand 10 min. before serving.

2 onions, diced
4 cloves garlic, peeled
2 tablespoons garam masala, or to taste

1 (28 ounce) can diced tomatoes, undrained
2 tablespoons tomato paste
4 (6 ounce) packages fresh spinach
