2 tablespoons olive oil
1/2 cup chopped red onion
1 small orange bell pepper, 1/2-inch diced
2 tablespoons unsalted butter
4 cups corn (Fresh kernels cut from 5 ears yellow or white corn)
1 1/2 teaspoons kosher salt
1 teaspoon fresh ground black pepper
2 tablespoons minced fresh chives (or all 3) or 2 tablespoons minced fresh parsley leaves (or all 3)

Steps:

  • Heat the olive oil over medium heat in a large saute pan. Add the onion and saute for 5 minutes, until the onion is soft. Stir in the bell pepper and saute for 2 more minutes.
  • Add the butter to the pan and allow it to melt. Over medium heat, add the corn, salt, and pepper and cook, stirring occasionally, for 5 to 7 minutes, until the corn just loses its starchiness. Season to taste, gently stir in the basil or other green herbs, and serve hot.

INA GARTEN CORN SALAD

Number Of Ingredients 1

1 g 5 ears of corn, shucked 1/2 cup small-diced red onion (1 small onion) 3 tablespoons cider vinegar 3 tablespoons good olive oil 1/2 teaspoon kosher salt 1/2 teaspoon freshly ground black pepper 1/2 cup julienned fresh basil leaves

Steps:

  • In a large pot of boiling salted water, cook the corn for 3 minutes until the starchiness is just gone. Drain and immerse it in ice water to stop the cooking and to set the color. When the corn is cool, cut the kernels off the cob, cutting close to the cob. Toss the kernels in a large bowl with the red onions, vinegar, olive oil, salt, and pepper. Just before serving, toss in the fresh basil. Taste for seasonings and serve cold or at room temperature.

Tips:

  • Use fresh, sweet corn for the best flavor. If you don't have fresh corn, you can use frozen or canned corn, but the flavor will not be as good.
  • Be sure to cook the corn properly. Overcooked corn will be tough and chewy, while undercooked corn will be starchy and bland.
  • Let the corn cool completely before adding it to the salad. This will help to prevent the salad from becoming watery.
  • Use a variety of fresh herbs in the salad for the best flavor. Some good options include basil, cilantro, parsley, and chives.
  • Don't be afraid to experiment with different ingredients in the salad. Some good additions include diced tomatoes, cucumbers, red onions, and avocado.

Conclusion:

Ina Garten's corn salad is a delicious and refreshing side dish that is perfect for summer gatherings. It is easy to make and can be tailored to your own taste preferences. With its bright flavors and colorful ingredients, this salad is sure to be a hit at your next party or potluck.
