Incredible Banana Bread image

I've never liked the taste of bananas, but this bread is incredible! I got the recipe from my sister-in-law, and decided to make it for my boyfriend as a treat. He loved it! It's become a favourite with my friends, and everyone asks me to make it. In the words of my little brother - it's the most delicious thing I've ever tasted!

Time 1h

Yield 10 serving(s)

Number Of Ingredients 12

1 cup butter
2 eggs
1/2 cup sour milk (or just add 1 tbs white vinegar to milk and let sit for 5 min)
3 mashed bananas
1 teaspoon banana extract (optional)
1 1/2 cups sugar
2 cups flour
1/2 teaspoon salt
1/4 teaspoon baking powder
3/4 teaspoon baking soda
1 cup walnut pieces
1 cup milk chocolate chips

Steps:

  • Preheat the oven to 350 degrees Celsius. Use butter to grease up a loaf pan.
  • Mix the dry ingredients and wet ingredients into separate bowls.
  • Fold the wet ingredients into the dry ingredients.
  • Mix in the walnut pieces and chocolate chips. Some people use one or the other, but I like to use both to make this bread extra delicious.
  • Pour the batter into the loaf pan and bake for 45 minutes.
  • NOTE: I find that with some ovens, this is not enough time to bake the bread thoroughly. What I usually do is pour the batter into two loaf pans and reduce the time, or I bake the bread until it no longer "jiggles" when I shake the pan gently. This usually takes about 1-1/2 hours. Watch it carefully as it bakes! It's worth the time.

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your banana bread will be.
  • Mash the bananas well: This will help to create a smooth, even batter.
  • Use a combination of flours: This will help to create a light and fluffy texture.
  • Don't overmix the batter: Overmixing can make the banana bread tough.
  • Bake the banana bread at a moderate temperature: This will help to prevent the bread from drying out.
  • Let the banana bread cool completely before slicing: This will help to prevent the bread from crumbling.

Conclusion:

Gluten-free banana bread is a delicious and easy-to-make treat that can be enjoyed by people of all ages. With a few simple tips, you can make a moist, flavorful banana bread that is perfect for breakfast, lunch, or a snack. So next time you have some ripe bananas on hand, be sure to try one of these gluten-free banana bread recipes. You won't be disappointed!
