AMY'S FAVORITE INDIAN FRY BREAD TACOS

Amy's Favorite Indian Fry Bread Tacos image

This is my daughter's absolute favorite meal and she requests it any time she can. She always has me make it for her new boyfriends' first meal at our house. Hopefully I can stop making them for that occasion because I really like her current boyfriend (UPDATE 2008: Guess I have to keep making these 'cuz the boyfriend turned fiance ended up being a DUD) :-)! Everyone always gives this meal great reviews and although it is a bit time-consuming, it is very much worth it! Start the Meat and Bean Mixture first and then when you take the lid of the pan to reduce the liquid, start the Fry Bread recipe so that they are still warm when you are ready to serve.

1 1/2 cups water

CALIFORNIA STYLE INDIAN FRY BREAD TACOS

California Style Indian Fry Bread Tacos image

If you have ever been to the State Fair in Sacramento, you would have seen booths selling these wonderful tacos! One definitely makes a meal!

Provided by That Napa Chicken R

Categories     Native American

Time 50m

Yield 4 serving(s)

Number Of Ingredients 14

1 cup unbleached flour
1/4 teaspoon salt
1 teaspoon powdered milk
1 teaspoon baking powder
1/2 cup water
vegetable oil (for frying)
1 lb ground beef
1 cup diced onion
salt and pepper
1 head lettuce, shredded
3 tomatoes, diced
2 cups cheddar cheese, shredded
1 (3 ounce) can diced green chilies, drained
sour cream (optional)

Steps:

  • Make the breads:.
  • Sift together the flour, salt, powdered milk, and baking powder into a large bowl. Pour the water over the flour mixture all at once and stir the dough with a fork until it starts to form one big clump.
  • Flour your hands. Using your hands, begin to mix the dough, trying to get all the flour into the mixture to form a ball.
  • NOTE: You want to mix this well, but you do NOT want to knead it. Kneading it will make for a heavy Fry Bread when cooked. The inside of the dough ball should still be sticky after it is formed, while the outside will be well floured.
  • Cut the dough into four (4) pieces. Using your floured hands, shape, stretch, pat, and form a disk of about 5 to 7 inches in diameter.
  • Use a large dutch oven and heat about 1 inch of vegetable oil to 350°F (If you don't have a thermometer you can tell if the oil is ready for each batch when a un-popped popcorn kernel is dropped in and pops immediately!).
  • Take the formed dough and gently place it into the oil, being careful not to splatter the hot oil. Press down on the dough as it fries so the top is submersed into the hot oil. Fry until brown, and then flip to fry the other side. Each side will take about 3 to 4 minutes.
  • The bread can be kept warm in a 200°F oven for up to 1 hour. They refrigerate well and can be reheated in a 350°F oven for 10 to 15 minutes before serving.
  • Make the Tacos:.
  • In a large frying pan over medium-high heat, brown ground meat and onions until cooked; add salt and pepper to taste. Remove from heat.
  • Place Fry Bread, cupped side up, on separate plates. Layer ground meat, lettuce, tomatoes, Cheddar cheese, and green chiles onto top of each Fry Brad. Top with sour cream, if desired.

TACO MEAT:
1 1/2 pounds ground turkey meat
1 onion sliced thin
approx 1/2 cup milk to fry onions
1/2 teaspoon curry
1 teaspoon cumin
1 package taco seasoning mix
1 teaspoon garlic powder
1 cup water
TACO SHELLS:
4 to 6 corn tortillas
olive oil for frying
VEGETABLES:
2 shredded lettuce
2 large tomatoes diced
1/2 onion chopped fine
1 cup shredded sharp cheese
OPTIONAL INGREDIENTS:
sour cream, avocado, olives, peppers, taco sauce, pico de gallo, etc.

Steps:

  • 1. PREPARE THE MEAT AND ONIONS: Put the ground turkey in the pan over medium heat and cook until light brown. Add the curry, cumin, garlic powder, and taco seasoning. Add one cup of water. Mix gently and simmer until liquid is reduced. Meanwhile, saute the onion in a tablespoon of olive oil in a small frying pan, adding the milk a small amount at a time to keep the onions from over browning and until the onions are tender and a nice carmel color. Add the onions to the meat mixture. and stir gently to combine. Simmer a few minutes more. Meat should be very moist when served.
  • 2. COOK THE TACO SHELLS: You can used boxed shells, but they are not as good as making your own. Take a medium frying pan and add some olive oil to it to fry the tortillas.
  • 3. Place the cooked shells on paper towels and drain.
  • 4. BUILD THE TACOS: Place the meat in the cooked taco shell and top with lettuce, tomato and onion and cheese, or anything else you wish. Sour cream and avocado is good. Taco sauce is another option. We like green sauce the best.
  • 5. Here is how your finshed Indian Taco should look!

Time 57m

Yield Six 4-inch round fry breads

Number Of Ingredients 13

1 1/2 pounds ground beef
6 round Fry Bread pieces, recipe follows
1/2 pound Cheddar cheese, grated
1 head lettuce, shredded
3 tomatoes, chopped
1 onion, chopped
Salsa, optional
Green chile, optional
2 cups unsifted all-purpose flour
1/2 cup dry milk solids
2 teaspoons double-acting baking powder
1/2 teaspoon salt
2 tablespoons lard, cut into 1/2-inch bits, plus 1 pound lard, for deep frying

Steps:

  • Brown the ground beef in a saute pan. Divide equally onto 6 Fry Bread rounds. Top with cheese, lettuce, tomatoes, and onions. Great served with salsa and green chile!
  • Combine the flour, dry milk solids, baking powder and salt, and sift them into a deep bowl. Add the lard bits and, with your fingertips, rub the flour and fat together until the mixture resembles flakes of coarse meal. Pour in the water and toss the ingredients together until the dough can be gathered into a ball. Drape the bowl with a kitchen towel and then let the dough sit at room temperature for about 2 hours. After sitting, tear the dough into 6 equal pieces. Then, on a lightly floured surface, roll each dough ball into a circle about 4 inches in diameter and 1/4-inch thick. With a small knife, cut 2 (4 to 5-inch) long parallel slits completely through the dough, down the center of each rolled piece, spacing the slits about 1-inch apart. In a heavy, 10-inch cast iron skillet, melt the remaining pound of lard over moderate heat until it is very hot but not smoking. The melted fat should be about 1-inch deep, add more lard if necessary. Fry the rolled dough, 1 at a time, for about 2 minutes on each side, turning them once with tongs. The bread will puff slightly and become crisp and brown. Drain the Navajo fry bread on paper towels and serve warm.
