IRISH NACHOS

Irish Nachos image

Irish nachos are everything you love about nachos with one major bonus: your favorite toppings are loaded onto a pile of crispy, golden potatoes.

Categories     Halloween     St. Patrick's Day     Super Bowl     appetizers     snack

Time 45m

Yield 6-8 servings

Number Of Ingredients 14

3 lb. Yukon gold potatoes
4 tbsp. olive oil
1 tsp. ground black pepper
1 tsp. garlic powder
Nonstick cooking spray
2 tsp. salt
2 c. shredded cheddar-jack cheese
8 slices cooked bacon, crumbled
Quick pickled onions (optional), sliced green onions, sour cream, and salsa, for serving
1 small red onion, halved and thinly sliced
1/2 c. white vinegar
1/2 c. water
1 tsp. sugar
1/2 tsp. salt

Steps:

  • Preheat the oven to 425°. Wash the potatoes and pat dry thoroughly. Slice the potatoes into 1/4-inch-thick rounds. In a large bowl, stir together the potatoes, olive oil, pepper, and garlic powder until well combined.
  • Spray two rimmed baking sheets with nonstick cooking spray. Divide the potatoes equally between pans and arrange them in an even layer. Bake for 20 minutes then remove the pans from the oven. Flip the potatoes, rotate the pans, and return to oven. Bake until the potatoes are golden brown, about 10 to 15 minutes more.
  • Remove the potatoes from oven and sprinkle evenly with the salt. Let cool 5 minutes. Combine the potatoes on one pan and sprinkle with the bacon and shredded cheese. Return the pan to oven and bake until cheese is melted, about 5 minutes more. Sprinkle with the quick-pickled onions and green onions; top with salsa and sour cream.
  • To make the quick-pickled onions (optional): Combine the onion, vinegar, 1/2 cup water, sugar, and salt in a small microwave-safe bowl or measuring cup. Microwave on high for 3 minutes. Let cool 15 minutes.

Tips:

  • Choose the right chips: Sturdy tortilla chips are a must for these nachos. They should be able to hold up to the weight of the toppings without getting soggy.
  • Layer your toppings: Start with a layer of chips, then add a layer of toppings, and repeat. This will help to ensure that every bite is loaded with flavor.
  • Don't be afraid to experiment: There are endless possibilities when it comes to topping your nachos. Get creative and use your favorite ingredients.
  • Use fresh ingredients: Fresh ingredients will give your nachos the best flavor. If you can, use fresh herbs, vegetables, and cheese.
  • Serve immediately: Nachos are best served immediately after they are made. This will prevent the chips from getting soggy.

Conclusion:

Irish chicken nachos are a delicious and easy-to-make party food. They are perfect for game day, potlucks, or any other casual gathering. With a few simple ingredients, you can create a dish that everyone will love. So next time you're looking for a fun and festive snack, give Irish chicken nachos a try!
