SOUTHERN-FRIED CORN RECIPE

Southern-Fried Corn Recipe image

Southern-fried corn cooked in a cast-iron skillet is the perfect side dish. With only five ingredients, including fresh sweet corn and bacon, this is a real family favorite.

Provided by Sharon Rigsby

Categories     Side Dish

Time 30m

Number Of Ingredients 5

6 ears fresh sweet corn (shucked)
4 slices bacon (not thick sliced)
4 tablespoons unsalted butter
1 teaspoon kosher salt
1/2 teaspoon ground black pepper

Steps:

  • Add the bacon to a cold 10-inch, cast-iron skillet over medium-low heat and cook for about five minutes or until the fat starts rendering out of the bacon.
  • Turn the heat up to medium and cook, frequently turning, for another four to five minutes or until the bacon is browned and crispy. Remove the bacon and drain it on paper towels. Set aside. Leave the grease in the skillet.
  • While the bacon is cooking, grab a deep bowl and a sharp knife. Hold each ear of corn up and slice the kernels off. You may have to go around several times to get all of the kernels. Then, take the back of the knife and scrape the cob to get all of that milky goodness. Don't skip this step.
  • Add the butter to the skillet and when it is melted, add the corn. Season it with salt and pepper.
  • Stir and cook it for anywhere from five to fifteen minutes. (The amount of time it will take to cook depends on how fresh the corn is; just-picked corn barely needs any cooking at all, and if it's older, it will take longer.) For this dish, it's important to taste it as it cooks to know when it's done.
  • Remove it from the heat, top with crumbled bacon and serve immediately.

CORN PONE

Corn Pone image

My husband's grandmother gave me this corn pone recipe years ago. She always made it with bacon drippings, which is heavenly, but if you're trying to be a little more health-conscious, you can use canola oil or a combination of the two. I cook it until it's crisp almost all the way through. It's delicious hot, warm or cold. -Tina Quiggle, LaGrange, Georgia

CAST IRON SKILLET CORN BREAD

Cast Iron Skillet Corn Bread image

This is a great recipe and tastes better, I find, when cooked in a cast iron skillet and served hot tableside. I have also served this recipe for breakfast, brunch, lunch and dinner. Whether with jam and butter or fried chicken on the side, there are rarely leftovers!

Provided by Alex Guarnaschelli

Time 55m

Yield 8 to 10 servings

Number Of Ingredients 10

1 1/4 cups coarsely ground cornmeal
3/4 cup all-purpose flour
1/4 cup granulated sugar
1 teaspoon kosher salt
2 teaspoons baking powder
1/2 teaspoon baking soda
1/3 cup whole milk
1 cup buttermilk
2 eggs, lightly beaten
8 tablespoons unsalted butter, melted

Steps:

  • Preheat the oven to 425 degrees F and place a 9-inch cast iron skillet inside to heat while you make the batter.
  • In a large bowl, whisk together the cornmeal, flour, sugar, salt, baking powder, and baking soda. Whisk in the milk, buttermilk, and eggs. Whisk in almost all of the melted butter, reserving about 1 tablespoon for the skillet later on.
  • Carefully remove the hot skillet from the oven. Reduce oven temperature to 375 degrees F. Coat the bottom and sides of the hot skillet with the remaining butter. Pour the batter into the skillet and place it in the center of the oven. Bake until the center is firm and a cake tester or toothpick inserted into the center comes out clean, 20 to 25 minutes. Allow to cool for 10 to 15 minutes and serve.

SOUTHERN SKILLET CORN

Southern Skillet Corn image

A sweet and savory skillet style corn made from fresh corn, cut off the cob and sauteed in a cast iron skillet with bacon grease, butter and seasoning.

Provided by Tina Butler | Mommy's Kitchen

Time 50m

Number Of Ingredients 5

3 - 4 cups fresh corn off the cob (about 6 - 8 ears of corn)
2 - tablespoons bacon grease
3 tablespoons butter
salt and pepper to taste
all purpose Greek Seasoning or Tony Chachere Seasoning, to taste

Steps:

  • Remove the husks and silk from the corn. Wash and cut corn off the cob using a knife.
  • I use my Bundt cake pan. The cob fits perfectly in the middle holw and the kernels just come right off and fall into the pan.
  • In a large cast iron skillet, melt the butter and bacon grease together.
  • Add the corn, salt, pepper and seasoning, stir to combine.
  • Cook the corn over medium-high heat until the corn is done (about 15-20 min). Continue to gently stir the corn every so often as the corn cooks.
  • Add additional salt, butter and seasoning if needed before serving.

Tips:

  • Choose the right corn: Select fresh, sweet corn on the cob with plump kernels. Avoid corn that is dry or has blemishes.
  • Prepare the corn: Husk the corn and remove the silk. Cut the kernels off the cob, or leave them whole if desired.
  • Heat the skillet: Preheat a cast iron skillet over medium-high heat. Add a drizzle of oil or butter to prevent the corn from sticking.
  • Cook the corn: Add the corn to the hot skillet and spread it out in an even layer. Cook the corn, stirring occasionally, until it is tender and slightly browned, about 5-7 minutes.
  • Season the corn: Once the corn is cooked, season it with salt, pepper, and any other desired seasonings. You can also add herbs, spices, or other vegetables, such as onions, peppers, or tomatoes.
  • Serve the corn: Fried corn can be served as a side dish, appetizer, or main course. It is delicious on its own, or you can top it with butter, sour cream, cheese, or salsa.

Fried corn is a delicious and versatile dish that can be enjoyed in many different ways. Whether you are looking for a quick and easy side dish or a hearty main course, fried corn is sure to please.
