Tips:

  • Choose tender green beans: Look for beans that are bright green and have no blemishes or bruises.
  • Trim the beans properly: Cut off the stem end of each bean, then use a sharp knife to remove any strings from the sides.
  • Blanch the beans before cooking: This helps to preserve their color and crispness. To blanch the beans, bring a large pot of water to a boil, add the beans, and cook for 2-3 minutes. Then, drain the beans and immediately plunge them into a bowl of ice water to stop the cooking process.
  • Use fresh tarragon: Tarragon has a delicate flavor that pairs well with green beans. If you can't find fresh tarragon, you can substitute dried tarragon, but use half the amount.
  • Don't overcook the beans: Green beans should be cooked until they are tender-crisp, but not mushy. Overcooked beans will lose their flavor and texture.
  • Serve the beans immediately: Green beans are best served fresh from the pan. If you need to make them ahead of time, blanch them and then store them in a covered container in the refrigerator for up to 3 days.

Conclusion:

Italian green beans with tarragon is a simple but flavorful side dish that is perfect for any occasion. The bright green beans are tender-crisp and have a slightly sweet flavor that is complemented by the aromatic tarragon. This dish is easy to make and can be prepared in under 30 minutes. So next time you're looking for a healthy and delicious side dish, give Italian green beans with tarragon a try.
