2 Italian sausages, removed from casings and crumbled
1 tablespoon olive oil
1 medium onion, chopped
4 cloves garlic, minced
3 tomatoes, diced
1 cup chopped fresh spinach
2 cremini mushrooms, chopped
1 ½ teaspoons dried basil
½ teaspoon salt
¼ teaspoon ground black pepper
¾ cup heavy cream
¾ cup milk
½ cup finely shredded Italian cheese blend
2 tablespoons all-purpose flour
2 (9 ounce) packages tri-colored cheese-filled tortellini

Steps:

  • Heat a nonstick skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned, about 10 minutes.
  • Heat olive oil in a large pot over medium-high heat. Add onion and garlic; saute until the onion is translucent, about 5 minutes. Reduce heat; add tomatoes, spinach, mushrooms, basil, salt, and pepper. Bring to a simmer, stirring as needed.
  • Combine cream, milk, cheese, and flour in a bowl. Add to the tomato mixture and return to a simmer. Stir occasionally until reduced, about 15 minutes.
  • While the sauce is reducing, bring a large pot of water to a boil. Add tortellini and boil gently until tender, about 6 minutes. Drain the tortellini. Mix with the tomato sauce and serve.

Inspired by Mean-Chef's gorgonzola sauce recipe (only easier) and a dish I had at a great little Italian restaurant in Albany, NY.

1/2 cup butter
8 tablespoons flour
4 cups milk (skim is ok)
1 pint cream (light Cream or half and half is ok)
8 ounces gorgonzola, crumbled
1/2 cup parmesan cheese, grated
6 cloves garlic, minced
salt & fresh ground pepper
6 cloves garlic, sliced
2 medium sweet onions, coarsely chopped
3 medium bell peppers, julienned (green, red, and yellow or any combination you prefer)
1 1/2-2 lbs Italian sausages, cooked and cut in 1 inch pieces on the bias.
1 lb asparagus, cooked al dente (optional)
1 lb portabella mushroom, sliced and pre-sauteed (optional)
1 1/2 lbs penne pasta, cooked per direction on package (Mini-penne's are a good choice)
extra virgin olive oil
1 teaspoon italian seasoning (or substitute basil and oregano)
salt and pepper

Steps:

  • In a large sauce pan melt butter over medium heat.
  • Add minced garlic to sauce pan cook for a few minutes but do not brown.
  • Whisk in the flour to make reux- cook for 3 to 5 minutes whisking constantly- do not let it brown.
  • Whisk in milk and heat until boiling- whisk often, add some fresh ground pepper.
  • Once sauce is thickened remove from heat and set aside (well get back to the this later).
  • In a large frying pan over medium-high heat add 3 Tbs olive oil add onions and slice the remaining garlic into pan sautee for 3 minutes until onion starts to soften.
  • Add peppers, Italian seasoning cook for 5 minutes until Peppers begin to soften.
  • Add cooked Sausage and warm through.
  • Just before vegetable and meat mixture is finished- heat White sauce and stir in the cream, bring up to almost a boil and stir in parmesean and gorgonzola.
  • Stir sauce until most of the gorgonzola is incorportated (lumps of cheese left in the sauce is a good thing!).
  • Check cream sauce for salt add if necessary.
  • In pasta bowls place Penne followed by Pepper onion meat mixture, then spoon on the Gorgonzola sauce, arrange mushrooms and asparagas on top.

2 tbsp. butter
2 tbsp. olive oil
1 med. onion
2-4 gloves of garlic
1 pkg italian sausage casings removed. (Johnsonville spicy)
2/3 cup white wine
1 can tomatoes
1 cup whipping cream
parsley
freshly grated parmesan cheese
1 Lb. penne pasta

Steps:

  • Saute onions and garlic 4-5 minutes, add sausage, brown and break up with fork; drain. Add wine cook for a couple minutes, add tomatoes cook for a coiple more minutes. Add cream and cook 4-5 minutes. At this point you can keep it warm or just reheat once pasta is ready. Cook the pasta then pour the sauce on top and add parsley and parmesan to taste.

1 lb. box farfalle (bow ties)
1 Tbsp olive oil, extra virgin
1 lb sweet italian sausage, casings removed and crumbled
1/2 tsp red pepper flakes
1/2 c diced onions
3 clove garlic, minced
1/2 tsp dried italian seasoning
1 (28oz) can(s) italian style plum tomatoes, drained & coarsely chopped
1 1/2 c heavy cream
1/2 tsp salt
2 Tbsp fresh parsley, minced

Steps:

  • 1. Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
  • 2. Heat oil in a large, deep skillet over medium heat. Cook sausage and pepper flakes until sausage is evenly brown. Drain any extra grease from the pan. Then, stir in onion and garlic, and cook until onion is tender. Stir in tomatoes, cream, and salt. Simmer until mixture thickens, 8 to 10 minutes.

1 large red bell pepper
1 1/4 cups heavy cream, divided
2 sweet italian sausage, casings removed and crumbled
10 large white mushrooms, sliced
1 large yellow bell pepper
1/4 cup and two tbsp extra virgin olive oil, divided
1/2 cup dry white wine
1/8 teaspoon nutmeg
1/8 - 1/4 teaspoon red pepper flakes (vary according to desired spice)
1/8 teaspoon white pepper
1/4 teaspoon paprika
1/8 teaspoon cayenne pepper
6 garlic cloves, pressed

Steps:

  • peppers: preheat oven to 400. remove stems and seeds from bells peppers. quarter. brush quarters inside and out with 2 tbsp olive oil. place peppers in an oven safe dish and cook 30 minutes flipping over halfway (or until each side is slightly browned and peppers are soft but not mushy). allow peppers to cool so that they can be handled. sauce: put olive oil, crumbled italian sausage, sliced mushrooms, garlic, nutmeg, and red pepper flakes into a deep heavy skillet and saute on medium high until meat is well done and mushrooms are tender. remove from heat. pour in white wine white pan is still hot. scraping the pan to pick up any browned bits. let sit on the stove while you prepare the rest of the sauce. place 1 cup of heavy cream in a blender with all of the red pepper and one quarter of the yellow pepper. puree for roughly 30 seconds until slightly thickened and the red pepper is totally pureed. chop remained 3/4 of the yellow bell pepper into one inch strips. mix the bell pepper cream mixture into the sausage and mushroom mixture, stirring thoroughly. add remaining 1/4 cup of cream, white pepper, paprika, and cayenne pepper. stir thoroughly and place on medium heat. continue stirring for roughly five minutes scraping sides and bottom while stirring. allow sauce to bubble for 10-15 minutes until liquid is reduced by 1/3. spoon sauce over pasta of your choice.
