1 lbs ground hot Italian sausage
1 lbs ground sweet or mild Italian sausage
4 slices Provolone cheese
4 roasted red bell peppers (from a jar)
½ cup pepper rings
¼ cup fresh basil leaves
4 Kaiser rolls (sliced in half and toasted)

Steps:

  • Preheat your grill to medium-high heat (about 450 degrees F).
  • While the grill preheats, add the ground hot and sweet Italian sausage in a large bowl. Roll up your sleeves and use your hands to combine.
  • Form the meat into four balls and lightly press each into 5-inch-wide, 1 ¼ -inch-thick patties.
  • In the middle of each burger, use your knuckle or thumb to make a 2-inch indentation (this will keep the burgers from puffing when grilled).

2 red bell peppers, sliced
1 large onion, sliced
Pinch plus 1 teaspoon kosher salt
Pinch plus 1 teaspoon freshly ground black pepper
3 cloves garlic, sliced
1/2 cup pizza sauce
2 pounds (80/20) ground beef
1 pound sweet Italian sausage, casing removed
1/2 teaspoon dried oregano
1/2 teaspoon dried ground sage
6 slices provolone
6 semolina rolls, split and toasted
Torn fresh basil, for topping

  • Preheat a grill to medium heat.

4 pounds sweet or hot Italian bulk sausage
1 tablespoon vegetable oil
Sweet Peppers, recipe follows
8 slices whole-milk mozzarella
8 bakery hamburger buns, buttered and griddled
Your favorite red sauce, for serving
4 green bell peppers, seeded and cut into strips
1/4 cup olive oil
1 teaspoon granulated garlic
Kosher salt and freshly ground black pepper

Steps:

  • Form the Italian sausage in 4-ounce patties a little bit wider than the buns you are using. Heat the oil in a cast-iron skillet over medium heat. In batches, cook each side of the patties until crisp and golden and no longer pink in the center, about 8 minutes a side.
