ITALIAN SAUSAGE WITH POTATOES, ONIONS, AND PEPPERS
I got this recipe from my mother inlaw, it is cheap and easy to put together. I love to throw this together on a cold, snowy Sunday morning - then I can just throw it in the oven later and go about my business while dinner cooks. Add a salad or crusty itallian bread for a side and you are all set. I sometimes use turkey sausage for a lower fat dish.

- Preheat oven to 350.
- Heat a large pot of water to boiling, add sausage, (poke a few holes in them to let the fat out) cover and turn the heat off. Let poach for 20 minutes; drain and refrigerate untill cool. (I usually do this while making dinner the night before). Slice the sausages into 1/4 to 1/2 inch coins.

- Repeat layers.
- Sprinkle cheese on top, cover with foil and bake at 350 for 1 1/2 hours or untill potatoes are cooked through. Remove foil for last 15 minutes of cooking.

- Increase heat to high, add potatoes and fry, turning often, until crispy and tender.
- Return sausage to the pan and heat through.

Tips:
- Choose the right sausage: Italian sausage comes in a variety of flavors, so choose one that you enjoy. Some popular options include sweet, hot, and fennel.
- Use good quality potatoes: Russet potatoes are a good choice for this recipe, as they hold their shape well when cooked.
- Season the potatoes well: Don't be afraid to use plenty of salt and pepper. You can also add other seasonings, such as garlic powder, onion powder, or paprika.
- Cook the potatoes until they are tender: The potatoes should be cooked through but still have a little bit of bite.
- Brown the sausage: Browning the sausage adds flavor and helps to keep it from drying out.
- Combine the sausage and potatoes: Once the sausage and potatoes are cooked, combine them in a large bowl.
- Serve immediately: Italian sausage and potatoes is best served hot. You can garnish it with fresh parsley or grated Parmesan cheese.
