1 celery rib, chopped
1 small onion, chopped
1/4 cup chopped green pepper
1/4 cup chopped sweet red pepper
1 tablespoon vegetable oil
1 Italian sausage link (1/4 pound), casing removed
1 can (14-1/2 ounces) stewed tomatoes, undrained
1 cup canned kidney beans, rinsed and drained
1 cup water
5 tablespoons tomato paste
2 tablespoons chopped green chilies
3/4 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup shredded cheddar cheese

Steps:

  • In a small saucepan, saute the celery, onion and sweet peppers in oil until crisp-tender. Crumble the sausage into a skillet; cook over medium heat until meat is no longer pink; drain. Stir in the tomatoes, kidney beans, water, tomato paste, chilies and seasonings; bring to a boil. Reduce heat; simmer, uncovered, for 20-30 minutes or until thickened. Sprinkle with cheese.

¼ cup vegetable oil
2 cups chopped bell peppers
1 large red onion, chopped
4 stalks celery, chopped
4 small carrots, chopped
2 ½ pounds Italian sausage links, casings removed
5 (14.5 ounce) cans Italian-style stewed tomatoes, undrained
6 cups water, or more to taste
2 cups black beans, rinsed and drained
2 cups kidney beans, rinsed and drained
1 ¼ cups tomato paste
1 cup uncooked brown rice
½ cup chopped green chile peppers
1 tablespoon chili powder, or more to taste
1 tablespoon chipotle peppers in adobo sauce
1 teaspoon salt
1 teaspoon ground black pepper
1 cup shredded Cheddar cheese

Steps:

  • Heat oil in a large saucepan over medium heat; stir in bell peppers, onion, celery, and carrots. Cook and stir until crisp tender, about 5 minutes.
  • At the same time, heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Transfer cooked vegetables and sausage to a Dutch oven. Stir in stewed tomatoes, 6 cups water, black beans, kidney beans, tomato paste, brown rice, chile peppers, chili powder, chipotle peppers in adobo sauce, salt, and pepper. Bring to a boil.
  • Reduce heat and simmer, uncovered, until thickened, 1 hour or more. Add more water if too thick.
  • Ladle into bowls and sprinkle with Cheddar cheese.

We Italian'd this up even more with cannellini beans and a touch of basil, but other than that, it's a fairly classic chili. Garnish with sour cream, avocado, red onion, and basil.

1 tablespoon olive oil
1 ¼ pounds hot Italian sausage, casings removed
1 ¼ pounds mild Italian sausage, casings removed
1 onion, chopped
salt to taste
2 tablespoons ancho chile powder
1 teaspoon paprika
1 teaspoon ground cumin
1 teaspoon ground black pepper
½ teaspoon chipotle chile powder
½ teaspoon dried oregano
2 ½ cups water, or as needed
1 cup tomato puree
2 (15 ounce) cans cannellini beans, drained and rinsed
1 red bell pepper, diced
1 green bell pepper, diced

Steps:

  • Heat oil in a large pot over medium-high heat. Cook and stir hot Italian sausage, mild Italian sausage, onion, and a pinch of salt together in the pot, breaking up sausage with a wooden spoon. Cook until sausage is browned and crumbly, and most of the liquid is evaporated, about 10 minutes.
  • Stir ancho chile powder, paprika, cumin, ground black pepper, chipotle chile powder, and oregano into sausage mixture; saute until fragrant, about 2 minutes.
  • Pour water and tomato puree into sausage mixture, bring to a simmer, reduce heat to medium-low, and cook on a steady simmer until sausage is tender, about 45 minutes. Add water as necessary and skim any fat that floats to the top.
  • Stir cannellini beans, red bell pepper, and green bell pepper into sausage mixture. Simmer until vegetables are tender, about 30 minutes. Season with salt to taste.

5 1/4 cups canned tomatoes, italian ready cut (I used S&W Diced with Garlic, Oregano & Basil)
3/4 lb turkey sausage, sliced
1 1/2 cups chicken broth (I used Swanson with less sodium)
1/3 teaspoon cayenne pepper
3 cups brown rice (cook according to pkg dir.)

Steps:

  • Cook the rice according to package directions.

1 lb mild Italian sausage (ground not links)
1 lb ground chuck
1 medium vidalia onion (diced)
1/2 green bell pepper (diced)
2 garlic cloves (diced)
1 tablespoon extra virgin olive oil
1 tablespoon Worcestershire sauce
1 teaspoon soy sauce
1 teaspoon onion powder
26 ounces dei fratelli rustic cut tomatoes
1/2 cup beef broth
2 cups jasmine rice (cooked to package directions)
1 teaspoon fresh fresh coarse ground black pepper (divided)
1 teaspoon sea salt (divided)

Steps:

  • In large skillet heat oil. Add both the diced onions and diced green bell peppers along with the minced garlic, and half the salt and pepper and saute until the onions and peppers are soft.
  • Add both the Italian sausage and ground chuck and brown until there is no more pink. While browning the meat make the rice to package instructions.
  • Drain most but not all of the excess grease. Add the rustic cut tomatoes, beef broth, Worcestershire sauce and soy sauce and the remaining salt and pepper. Bring to a boil and cook for 10-15 minutes.
  • Remove half the meat mixture and place in freezer bag to save for another time.
  • Pour rice into large serving bowl and pour remaining meat mixture on top. Mix well then serve.
