6 garlic cloves, halved
2 medium carrots, cut into chunks
1 small onion, cut into wedges
1 can (15 ounces) black beans, rinsed and drained
1 cup quick-cooking oats
1/2 cup fat-free milk
1 can (6 ounces) tomato paste, divided
3 teaspoons Italian seasoning, divided
1 teaspoon seasoned salt
1 package (20 ounces) lean ground turkey
1 tablespoon water

Steps:

  • Preheat oven to 350°. Place garlic, carrots and onion in a food processor; pulse until finely chopped. Add beans; process until blended. In a large bowl, combine oats, milk, half of the tomato paste, 1-1/2 teaspoons Italian seasoning, seasoned salt and black bean mixture. Add turkey; mix lightly but thoroughly., Shape into a loaf and place in an 11x7-in. baking dish coated with cooking spray. Bake, uncovered, 30 minutes., Combine water with the remaining tomato paste and Italian seasoning; spread over meat loaf. Bake 10-15 minutes longer or until a thermometer reads 165°. Let stand 10 minutes before slicing.

1 lb Italian sausage, casings removed (turkey or pork)
1/2 cup progresso Italian style breadcrumbs
1/2 cup parmesan cheese, grated
1 large egg
1 cup tomato and basil pasta sauce or 1 cup tomato and oregano pasta sauce, divided
1 clove garlic
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Preheat oven to 350 degrees.
  • In a large glass bowl combine all the ingredients except 1/2 cup of sauce.

1 egg
¼ cup Italian seasoned bread crumbs
1 teaspoon Italian seasoning
½ clove garlic, minced
½ teaspoon ground black pepper, or to taste

2 cups tomato sauce, divided

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Prepare a baking dish with cooking spray.

1/4 cup plus 2 tablespoons extra-virgin olive oil
4 teaspoons (about 6 cloves) chopped garlic
2 medium onions, diced
2 red peppers, seeded, small diced
1/2 cup chopped basil leaves
2 tablespoons chopped parsley leaves
4 eggs
1 teaspoon salt
1/2 teaspoon black pepper
2 cups grated Parmesan
1 1/2 cups breadcrumbs
3 pounds ground beef
2 tablespoons Worcestershire sauce
2 tablespoons balsamic vinegar
1 cup marinara sauce

Steps:

  • Preheat oven to 350 degrees F.
  • Heat 1/4 cup of the olive oil in a medium saute pan over medium heat and add the garlic. Saute 1 minute and then add the peppers and onions and saute until just soft. Let cool.
  • Whisk together the basil, parsley and eggs in a small bowl, and then add the salt and black pepper. Combine the Parmesan and breadcrumbs in another small bowl. 2 garlic cloves, minced
1 cup oatmeal (old fashioned or cut ok)
1 1/2 teaspoons italian seasoning
1/2 cup chopped black olives
1/2 cup chopped sun-dried tomato packed in oil, drained
1/2 cup dry red wine
2 eggs
4 tablespoons tomato paste
1 1/2 teaspoons basil
1 teaspoon salt
1/2 teaspoon crushed red pepper flakes
2 lbs ground turkey (or ground meat of your choice)
4 tablespoons grated parmesan cheese

  • Bake for 1 hour. Sprinkle the Parmesean cheese over the top and bake 15 minutes more, or until cheese melts and a meat thermometer reaches 160*. Let stand 5 minutes. Slice and enjoy!
