3 tablespoons mayonnaise
1 clove garlic, finely chopped
8 ounces ground turkey
12 ounces sweet Italian turkey sausage, removed from casings
2 teaspoons extra-virgin olive oil
8 thin slices pancetta
4 ounces sliced Italian fontina cheese
Four 3-by-3-by-1/2-inch squares focaccia, split and lightly toasted
1 plum tomato, sliced
1 cup baby arugula

Steps:

  • Mix the mayonnaise with the garlic in a small bowl and set aside. Using your hands, mix together the turkey and turkey sausage in a large bowl until just combined. Form this mixture into four 1-inch-thick patties.

1/4 cup fennel leaves, minced
1/2 lb italian sweet sausage, casings removed (turkey is fine)
10 ounces white meat turkey, ground
1/2-1 teaspoon hot chili sauce, sriracha
salt & freshly ground black pepper
6 ounces swiss cheese, sliced
olive oil
1 fennel bulb, cored, thinly sliced
1/2 head red cabbage, cored, thinly sliced
3 green onions, sliced
2 tablespoons olive oil
1/4 cup red wine vinegar

Steps:

  • In a heavy skillet over medium heat warm about 1 to 2 teaspoons olive oil. When hot add in chopped onions and cook until wilted. Stir in minced garlic, basil and oregano. Cook for 1 to 2 minutes. Remove from heat and allow to cool.

  • Preheat a heavy skillet or flat griddle over medium high heat. Drizzle the burgers with olive oil and place oiled side down on preheated pan. Cook turning once until cooked through, approximately 5 minutes per side for 3/4 inch patties. When turning drizzle top with olive oil before turning.
