1 teaspoon Italian seasoning
½ clove garlic, minced
½ teaspoon ground black pepper, or to taste

2 cups tomato sauce, divided

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Prepare a baking dish with cooking spray.
  • Mix turkey, egg, bread crumbs, Italian seasoning, garlic, black pepper, and salt in a large bowl; shape into a loaf and put into prepared baking dish.
  • Bake in preheated oven for 40 minutes. Spoon about half the tomato sauce over the loaf and continue baking until the meatloaf is no longer pink in the center, 10 to 15 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Rest meatloaf 5 to 10 minutes before slicing to serve.

6 cloves garlic, minced
½ cup chopped fresh basil
2 eggs, beaten
2 tablespoons chopped fresh flat-leaf parsley

20 ounces sweet Italian turkey sausage, casings removed
1 ½ cups Italian bread crumbs

2 1/2 lbs italian seasoned ground turkey (Jennie O)
1 yellow onion
10 white mushrooms
6 garlic cloves
1 carrot
1 cup Italian seasoned breadcrumbs
2 eggs
3/4 cup barbecue sauce
6 ounces shaved parmesan cheese
seasoned pepper
4 tablespoons extra virgin olive oil

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Dice onion and mushrooms. Mince garlic. Sautée in a skillet with EVOO until onions are golden and translucent. Season with seasoned pepper. Remove from heat.
  • 3. Grate carrot into a large mixing bowl then add 1/2 cup BBQ sauce, 4 oz shaved Parmesan cheese and remaining ingredients and blend thoroughly. When finished, mixture should be firm enough to maintain a loafed shape. If needed, add more bread crumbs to stiffen mixture.
  • 4. Place ground turkey mixture into 5 small loaf pans approx 5x3 inches (I purchased mine from grocery store in a set of 5 disposable pans with lids).
  • 5. Bake at 350 degrees for approximately 40-45 minutes. With approximately 15 min remaining, spread remaining BBQ sauce over loafs then sprinkle with remaining Parmesan cheese. When done internal temp should be 165 degrees F and cheese on top melted and golden.

6 ounces crimini mushrooms
1 cup fresh basil leaves
1/2 cup sun-dried tomato halves
2 cups panko crumbs
1/2 cup fresh italian parsley leaves
1/2 medium sweet white onion
2 tsp dried oregano
1 tsp dried thyme
1-1/4 cups coarsely grated or chopped smoked gouda or smoked mozzarella
2 lightly beaten large eggs
2/3 cup Trader Joe's Garden Patch vegetable juice or other tomato juice
S&P to taste
3 tbsp organic ketchup

Steps:

  • Preheat oven to 350 (convect). Pulse mushrooms in food processor until finely chopped, and add to large mixing bowl. Do same with basil, sun-dried tomatoes, and onion together, and add to bowl. Process panko with dried herbs and fresh parsley until well combined, and add to bowl. Add 1 cup smoked cheese, turkey, and panko mixture to bowl and mix together with hands until well combined. Add beaten eggs and tomato juice and mix with hands again. Spread mixture out on a piece of waxed paper or foil, into a 12 x 15 rectangle and then roll up from one short side, using foil to guide you. Slip foil out from underneath, tuck in ends, and place meatloaf roll in shallow baking pan. Spread top with organic ketchup and bake about 1 hour. Remove from oven, sprinkle with remaining 1/4 cup grated cheese and return to oven another 10 minutes. Allow to rest about 10 minutes before slicing.

1 pound ground turkey
2 eggs, beaten
1 ½ cups rolled oats
½ cup chopped onion

1 tablespoon Worcestershire sauce

½ teaspoon salt
2 cups spaghetti sauce
5 dashes hot pepper sauce
